Black bean and quinoa veggie burgers here! It’s late spring and with summer rapidly approaching, I’ve got all the warm weather food on my mind. Burgers are definitely on that list. And who doesn’t want a good meatless option for you or your vegetarian guests.
I do lots of veggie burgers. I think it’s a good staples recipe to have on hand. They can be made a million ways, and mostly with pantry staples. Basically it’s the perfect no brainer dish to put together. That’s what I am all about. The easy stuff.
I also like having a few trusty veggie burger recipes because they are great for batch cooking. Cook once and have multiple meals is what I am all about. Since I usually do a batch of grains over the weekend, recipes like this one come together quickly. But if you didn’t have that done, this recipe uses quinoa which is one of the quicker grains to cook, so it’s still pretty simple. If you had brown rice or wild rice, that would be quite tasty too. I use black beans, which I think are delicious, but kidney or even white beans would work too. I wouldn’t suggest garbanzo, you want something that’s a little creamier and easy to mash. The mashed beans help act as a binder to hold this together.
And what’s a burger without the toppings? It would be very boring. So lets not be boring. Let’s discuss how to serve and jazz this thing up. I like to serve this over a bed of greens or wrapped in lettuce with avocado, tomato, and spicy vegan aioli. Yes, I am that person that puts a (veggie) burger patty over greens. I’d rather indulge in fries than a bun. Moving on, I also love red onion, caramelized onions, pickled onion, yes I love onions. Ketchup, or pickles too if I have them on hand. If you are a bun person, how about delicious brioche bun. That would be fantastic and make me consider swapping the lettuce wrap. But I don’t keep those on hand so lettuce wrap it is. Oh, cheese, because what is cheese not good on. So if you have a favorite for burgers, get it on this! I think that about wraps up the toppings. Black Bean Quinoa Burgers
Ingredients
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 1 can black beans, rinsed and drained
- 1 cup cooked quinoa *about 1/2 cup dry
- 1/4 cup breadcrumbs
- 2 tbsp flour *i use buckwheat. AP works fine too
- 2 tbsp tamari
- 1 tsp chili powder
- 1 tsp dried oregano
- 1 egg
- 2 tbsp tamari or coconut aminos
- splash (about a couple tsp) red wine vinegar *optional
Instructions
- In a large pan over medium heat, cook the onion in a little oil. Cook until soft, about 5 minutes. Add the garlic and a big pinch of salt and cook for another minute.
- In a large bowl, add the black beans and give them little mash. You don't want them completely mashed, just a little textured. Add the rest of the ingredients. Mix well, then form into roughly 6 patties.
- If you can refrigerate for about a half hour, great. If not, start cooking them. I put more oil in the same pan you cooked the onions. I also like to add a little butter which makes a nice crispy outside. Cook each burger for about 4-5 minutes on each side.
- Serve with lettuce or in a bun. Add all your favorite burger toppings and enjoy!
