I thought I should wait before adding another ridiculously simple recipe to the blog, but I’ve gotten lots of questions on nut butter so…
I love making staples, like this cashew butter, because it’s so easy, I am in control of the ingredients, and it often saves money. I’ve been making a bigger effort to cut back on packaging and food waste lately, so this is also a way to help that effort. I buy raw nuts in bulk so I can always change up the combo. I also like to use seeds, such as sunflower, to make it even more cost effective. Cashews, pecans, and other nuts can add up! I use a Vitamix, but a good food processor will do the trick too. Just when you think it’s good, go for a few minutes more. This gets it really creamy and dreamy drippy. The combinations are endless. I usually do 2 cups nuts to 1 cup seeds, or all nuts.
