I love this skillet dish. It’s loaded with peppers, onions, and potatoes and boldly seasoned taco seasoning. It easily comes together and only uses one pot, but this simplicity doesn’t take away from it’s amazing taste. Another plus is it stores well which makes for good leftover. I added some vegan sausage, which can be left out if it’s not your thing. I also topped my husband’s with an egg, which is totally optional.
