I’d say ninety percent of the meals we cook are made with clean ingredients, a simple process, and they come together quickly. I just like food to be easy, delicious, and healthy. Some of my favorites are curries, stews, and veggie bowls. These check all the marks plus are multiple servings which is great for leftovers and lunches later in the week. I’m all about keeping it simple. This sweet potato stew is packed with flavor and hearty, plus it only gets better the longer it sits, making it great for multiple meals. Delicious on it’s own, but also great changed up. Serve over some quinoa with natural yogurt and cilantro, or with some brown rice and avocado.
