My new favorite dish, a tomatillo shakshuka. It’s everything I want in a homemade meal; easy and made in one pan, clean, real ingredients, and beyond delicious. I’ve always loved tomatillo salsa and given a choice I’ll choose it over a red salsa almost any day. So why not throw it in a pot with a bunch of other greens and bake some eggs into it? Oh, and don’t forget some crusty sourdough for all the dipping! If you don’t do eggs, you can easily make this vegan. White beans (cannellini) are great too. You can even throw some in with the egg version for more protein and substance.
If you aren’t going to eat the whole dish and have leftovers, only put enough eggs for that meal. Toss another egg on when you warm up leftovers.
