This soup has been on repeat lately. I make a big pot once for dinner, then have a leftovers later for the week. It’s so simple and made with only a few ingredients, but so hearty and flavorful. It’s hard to believe it’s really that simple clean while tasting so yummy.
Roast cauliflower, potatoes, and garlic with herbs. Add to a pot with onion, coconut milk (promise it doesn’t taste weird), and broth. Blend and serve. It’s that easy!
