We all need an easy cookie recipe, right? One that requires minimal time, cleanup, and only a few ingredients. One that makes sweet, pillowy chocolate chip delights. Well here you go.

1 bowl, under 30 minutes, gluten free, and refined sugar free.

I’m all about a good sweet treat from time to time. One shouldn’t feel guilt over that. But if you’re like me and my husband and want one a little more often, these are great. I make them smaller and almost bite sized. Plus they are gluten free and refined sugar free. In fact, the whole recipe only calls for 1/2 cup of coconut sugar. Enjoy!

1/2 cup melted coconut oil
1/2 cup coconut sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups gluten free flour – I like the Bobs Redmill 1:1
Pinch of salt
1 cup chocolate chips
Optional sea salt for topping
Preheat oven to 350. In a large mixing bowl, whisk coconut oil, eggs, sugar, and vanilla. Mix in flour and salt. Once combined, stir in chocolate chips.
I refrigerate this for about 10 minutes, but not necessary.
Roll dough into cookies, about 15 small ones. Flatten a little. The cookies won’t spread. Option to top with sea salt.
Bake for 10 minutes.
Cool and enjoy!
