One of my favorite comfort foods is a good grilled cheese. Warm, melty, cheese, and lots of it. And this brie and apple grilled cheese kicks it all up a notch with crisp apple and caramelized onion. It’s comfort food at its best.
Jump to RecipeWhen I lived in LA there was this cute pub in Santa Monica near my apartment that my best friend and I went to all the time. One of our favorite things to order was this grilled cheese with brie and apple served with a warm cup of tomato soup. My goodness, it was so delicious!
It’s been years since I’ve been to this little place or even had this grilled cheese but it still sticks in my head. I finally decided to make my own only for this one I am adding more cheese (who doesn’t want more cheese) and some caramelized onion. I know the onions are a longer, extra step but they are totally worth it. Want to make this faster? You can leave them out. But what you shouldn’t skip? Lots of cheese, a crisp apple, and butter and salt on good bread. My favorite is sourdough.
Ingredients needed for the Brie and Apple Grilled Cheese
- Onion
- Brie
- Cheddar
- Apple – I like a green apple or Honeycrisp for this
- Bread – Sourdough is my choice
How to make Brie and Apple Grilled Cheese
- Start by caramelizing the onion. You slice the onion then cook it in a skillet on medium/low adding water as needed. It will take roughly 20-30 minutes but it’s worth it. Add a little salt at the end for some flavor.
- Take your sliced bread, butter one side of each, and add a little salt to the butter.
- Slice your brie and shred your cheese. Thinly slice the apple. Layer brie, apple, then cheddar. Top with the onion.
- Grill on both sides or put in a panini press or put a press on top. (One of these is great too, I use mine all the time)

Brie and Apple Grilled Cheese
Ingredients
- 1 white onion sliced into half moons
- 4 sliced bread, I love a good sourdough for this
- 1/2 apple, thinly sliced I like using honeycrisp or a granny smith
- 1/2 cup shredded and packed white cheddar more or less depending on preference
- brie I use about 3 1/4 inch slices per sandwich
- butter, salt & pepper
Instructions
- Slice the onion and slowly cook over a low medium heat in a skillet. It will take about 20 minutes. Add splashes of water as needed when it's getting too dry. The brown bits will stick to the onion.
- Generously butter one side of each slice of bread. I like to salt the bread too. On the nonbuttered side assemble the grilled cheese. I layer brie and apple on one slice and cheddar and onion on the other. Add more or less cheese depending on taste. Carefully close the sandwich and grill on each side. I like to put a press on the top to help press is down harder.
- Grill each side until brown and crispy and cheese is melted. Serve and enjoy!
