I am wholeheartedly an appetizer person. I love snacks and small bites and could probably just live on them. So why not make an appetizer that is not only delicious but also healthy and protein-packed? This caramelized onion dip is loaded with flavor from the onions and is also filled with protein using cottage cheese and Greek yogurt for a base.
This dip takes some time because the onions need to be properly caramelized. But it’s worth it, trust me. And it’s not a hard process. The result is this creamy, yummy dip that you can eat plenty of because it’s healthy too! I am definitely one to overdue it on the apps before a meal, I can’t help it, but with this dip, I don’t mind because I look at it as getting in my protein too. Greek yogurt and blended cottage cheese, perfect. And if you aren’t buying into the cottage cheese trend yet, once it’s blended it just takes on the best creamy texture and adds great flavor to this dip. The texture change is a total selling point for any skeptic.
Caramelized Onion Dip
Ingredients
- 1 cup cottage cheese small curd and not runny
- 1 cup greek yogurt
- 2 1/2 medium sweet onions
- 4 tbsp butter
- 1 tbsp worchesteshire sauce
- 2 tbsp mayo
- salt & pepper
Instructions
- Start by dicing the onions. In a cast iron skillet or stainless steel pan on medium heat, melt the butter. Add the onions and a good pinch of salt. Let cook, stirring to make sure nothing burns. Once the onions begin to sweat you can slightly turn the heat down. Add splashes of water as needed to pick up the brown bits and to keep the onion from burning. The whole process will take about 30-40 minutes. Stir in the Worchesteshire sauce at the end.
- Blend the cottage cheese and greek yogurt with the garlic powder. Spoon into a bowl and stir in the mayo with. Stir through the onions once they are done and slightly cooled. Adjust salt and pepper as needed. Let set in the fridge before serving. Serve with your favorite potato chips or crackers
