If you’re anything like me, you’re always looking for a quick yet satisfying dinner that pleases the whole family. That’s where this Lemon Chicken Parm Pasta comes in! It’s a delicious mashup of a few of my favorite things: the crispy texture of chicken parmesan, the creamy goodness of a rich pasta sauce, and a subtle touch of lemon to brighten it all up.

Honestly, the combination might initially sound a little unusual—lemon with chicken parm? But trust me, it’s magic. The hint of lemon gives the creamy sauce a fresh pop without overpowering it, making it feel a little lighter and more sophisticated. Plus, air-frying the chicken keeps things a bit healthier while still giving you that crispy, satisfying bite. If your family loves pasta as much as mine does, this is sure to become a new favorite in your dinner rotation.

• 1/2 cup panko breadcrumbs

• 1/4 cup grated parmesan cheese

• 1 teaspoon garlic powder

• 1 teaspoon dried Italian seasoning

• 1/2 teaspoon lemon zest

• 1/2 teaspoon salt

• 1/4 teaspoon black pepper

• 1 tablespoon olive oil spray (for air fryer)

For the Pasta & Sauce:

• 8 ounces penne pasta (whole-wheat or regular)

• 1 tablespoon olive oil

• 3 cloves garlic, minced

• 1/2 cup low-sodium chicken broth

• 1/2 cup heavy cream

• 1/4 cup plain Greek yogurt

• 1 tablespoon lemon juice (freshly squeezed)

• 1/2 cup shredded mozzarella cheese

• 1/4 cup grated parmesan cheese

• 1 teaspoon lemon zest

• Salt and pepper, to taste

• Fresh parsley, chopped, for garnish

Main Ingredient Breakdown

• Chicken: By using air-fried chicken breasts, we get that classic, crispy chicken parm feel without the extra oil and calories. The panko and parmesan crust adds texture, while a hint of lemon zest infuses subtle flavor.

• Penne Pasta: I love using penne for this dish because the creamy sauce clings to the ridges, ensuring every bite is full of flavor.

• Creamy Sauce: The sauce gets its richness from a combination of Greek yogurt, heavy cream, and a touch of chicken broth. The Greek yogurt adds creaminess while keeping it lighter, and the lemon juice adds a bright, fresh flavor.

Directions

1. Prepare the Chicken:

• Preheat your air fryer to 400°F (200°C)

• In a shallow bowl, combine panko breadcrumbs, grated parmesan, garlic powder, Italian seasoning, lemon zest, salt, and pepper.

• Lightly spray chicken breasts with olive oil, then press them into the breadcrumb mixture to coat.

• Place the chicken in the air fryer basket and lightly spray the tops with olive oil. Cook for 10-12 minutes, flipping halfway through, until golden and cooked through (internal temperature of 165°F).

• Once done, slice the chicken into strips or bite-sized pieces.

2. Cook the Pasta:

• While the chicken cooks, bring a pot of salted water to a boil. Add penne pasta and cook until al dente according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.

3. Make the Creamy Lemon Sauce:

• In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

• Stir in chicken broth and simmer for 2-3 minutes.

• Lower the heat, then add the heavy cream, Greek yogurt, lemon juice, and lemon zest. Cook for another 2-3 minutes, stirring continuously, until slightly thickened.

• Mix in shredded mozzarella and grated parmesan until melted and smooth. If the sauce is too thick, use reserved pasta water to adjust the consistency.

• Season with salt and pepper to taste.

4. Combine & Serve:

• Toss the cooked penne pasta with the sauce until well coated.

• Stir in the sliced air-fried chicken and gently combine.

• Garnish with chopped parsley and extra parmesan cheese if desired. Serve immediately and enjoy!

Tips

• Don’t overcook the chicken: The air fryer can cook chicken quickly, so keep an eye on it to ensure it stays juicy on the inside and crispy on the outside.

• Adjust the sauce consistency: If the sauce gets too thick, simply add a splash of the reserved pasta water to thin it out.

• For a healthier twist: Substitute whole-wheat pasta.

2️⃣ cook the eggs and add cottage cheese if you want. Fill with 3/4 of the cheese, cooked sausage, scrambled eggs, and the rest of the cheese.
3️⃣ Fold over the crescent dough to seal the ring.
4️⃣ Brush with melted butter and bake at 375°F for 20-25 mins until golden brown.

Serve with your favorite hot sauce or salsa! 🌶️😋

Here’s all you need:
1 sheet puff pastry, thawed
1 round (8 oz) Brie cheese
1/3 cup cranberry sauce 
1/4 cup chopped pecans or walnuts (optional)
1/2 tablespoon honey (optional)
1 egg, beaten (for egg wash)
Crackers or sliced baguette, for serving

Instructions:
1️⃣ Place Brie on puff pastry, top with cranberry sauce, and wrap it up!  Make sure to not overlap too much of the pastry won’t cook. Cut or tear off any excess. You can bake it on the side to eat with the cheese. 
2️⃣ Brush with egg wash and bake at 400°F for 25-35 minutes.
3️⃣ Let cool, slice, and serve with crackers or bread. 🙌

1 egg, beaten (for egg wash)
Crackers or sliced baguette, for serving

Instructions:
1️⃣ Place Brie on puff pastry, top with cranberry sauce, and wrap it up!  Make sure to not overlap too much of the pastry won’t cook. Cut or tear off any excess. You can bake it on the side to eat with the cheese. 
2️⃣ Brush with egg wash and bake at 400°F for 25-35 minutes.
3️⃣ Let cool, slice, and serve with crackers or bread. 🙌

Busy nights call for simple, healthy meals, and this low-carb enchilada casserole is a total WIN! 🥳 Packed with lean ground beef, spinach, beans, and melty cheese, it’s full of flavor and perfect for the whole family. 🙌

🌟 Why you’ll love it:

What you’ll need 
1 lb lean ground beef
1 small onion, diced
2 cups chopped spinach
1 (15 oz) can black beans, drained
1 (15 oz) can enchilada sauce (love @eatsomos )
8 low-carb tortillas, quartered (@missionfoodsus )
2 cups shredded cheese
1 tbsp olive oil
2 spoonfuls Greek yogurt (optional for creamier filling)
Optional toppings: Greek yogurt, guacamole, salsa, jalapeños

Instructions: 
1.Heat olive oil in a skillet, cook 1 lb ground beef, and season with salt and pepper.
2.	Add diced onion, chopped spinach, drained black beans, a little greek yogurt, and a handful of shredded cheese. The yogurt and cheese are optional but make the filling nice and creamy.  Cook until softened.
3.	Stir in ½ cup of enchilada sauce and remove from heat.
4.	In a greased 9x13 pan, layer tortillas, beef mixture, shredded cheese, and enchilada sauce. Repeat until all ingredients are used, finishing with tortillas, sauce, and cheese.
5.	Bake at 375°F for 30 minutes (covered for 20, uncovered for 10).
6.	Top with your favorites: Greek yogurt, guacamole, and salsa. Slice and enjoy!
