Brie and Apple Grilled Cheese

A delicious melty grilled cheese with apple and caramelized onion

Ingredients
  

  • 1 white onion sliced into half moons
  • 4 sliced bread, I love a good sourdough for this
  • 1/2 apple, thinly sliced I like using honeycrisp or a granny smith
  • 1/2 cup shredded and packed white cheddar more or less depending on preference
  • brie I use about 3 1/4 inch slices per sandwich
  • butter, salt & pepper

Instructions
 

  • Slice the onion and slowly cook over a low medium heat in a skillet. It will take about 20 minutes. Add splashes of water as needed when it's getting too dry. The brown bits will stick to the onion.
  • Generously butter one side of each slice of bread. I like to salt the bread too. On the nonbuttered side assemble the grilled cheese. I layer brie and apple on one slice and cheddar and onion on the other. Add more or less cheese depending on taste. Carefully close the sandwich and grill on each side. I like to put a press on the top to help press is down harder.
  • Grill each side until brown and crispy and cheese is melted. Serve and enjoy!
