When I was single and lived alone, I would cook a huge pot of veggies a couple times a week and have that for lunch and dinner most nights. I’d add things like beans, grains, and greens for more substance, but the bulk was always a big bowl of steamed veggies. Sounds boring, but when my roommate or people hanging around tasted it, they’d comment how delicious the veggies were. Almost like they’d expect it to be bland. I get it though, a bowl of veggies doesn’t seem all that exciting. But they can be! It’s all in the seasoning. Like this bowl. It’s got a good sauce, meaty mushrooms, and laid on top of cilantro lime rice. Completely plant based and so good!
The majority of my recipes are to show how easy plant based food can be. This falls right into that. It’s really just a bowl of frozen veggies over rice with a great sauce. Sure, fresh veggies are great, but frozen bags come in handy for quick meals.
2 packages frozen stir fry veggies – I use a riced cauliflower mix
1 8oz package of chopped mushrooms
1/4 cup rice vinegar
2 tbsp tamari
1 tbsp chili paste
2 tsp honey or maple syrup
1 tbsp arrowroot powder or cornstarch
3-4 cups of cooked rice of choice
1 lime
green onion, cilantro, chopped cashews for topping
Start by heating a little over in a pan over medium heat.
Add mushrooms and cook for a few minutes.
Add frozen veggies and cook until warm. About 5 minutes
While veggies are cooking, whisk together sauce in a small bowl. Vinegar, tamari, chili paste, honey, and arrowroot powder.
Add sauce to cooked veggies and cook for about 5 minutes, until sauce thickens.
For the rice, I like to use jamsine rice. I like to stir in the juice of 1 lime and add a small handful of chopped cilantro.
Spoon the veggies over the rice. Top with cilantro, green onion, and chopped nuts.
Makes about 3 servings. Prep time is less than 5 minutes, total cook time is about 15 minutes.
