Check out this tomato and rice soup for a hearty and tasty winter meal. This is a simple recipe for when you want the comfort of a home-cooked meal but have a limited time and limited ingredients.
Our nights are definitely chilly here now which has me craving lots of warm, comforting foods for dinner. And a good soup never fails. This one is great because it is made with mostly pantry staples and is a total breeze to whip up.
The base of this tomato and rice soup recipe is canned fire-roasted tomatoes and wild rice. The combination of these two makes this soup nice and hearty. Leftovers really thicken up, almost stew-like, which I really like but you could also add a little more broth and thin it out if you prefer.
For this recipe, you will need :
- One small onion
- Four cloves of garlic. I like a lot of garlic!
- Tomato paste
- Vegetable broth
- One can of fire-roasted tomatoes
- One cup of rice I like to use either brown rice or wild rice. To save time you can also use a bag like the ones they sell at Trader Joe’s that only take 3 minutes to microwave.
- 2 tablespoons dried herbs. I either use Italian herbs to Provence
- optional to add one fresh tablespoon of herb start there at the end. If I have some basil on hand, I like to add that in at the end
- Also optional to add some croutons, cheese, or whatever else you like to add on. I’ll even do a dollop of plain yogurt
The rice and tomato soup comes together easily after you gather the ingredients. Sauté the onion and garlic and get the kitchen smelling so good! Add seasoning and some salt and pepper. Toss in tomatoes, tomato paste, and the broth. I like to have some rice cooked at the beginning of the week to add to meals like this, but if you don’t already have some make that first and add to the soup. I would opt for the quickest cooking rice because this is supposed to be a fast and easy recipe. And there you have it, healthy hearty soup that takes less time than it takes to go pick up dinner or wait for delivery.
Tomato Rice Soup

Ingredients
- 1 small onion, diced
- 4 garlic cloves minced
- 2 tbsp tomato paste
- 2 cups vegetable broth
- 1 can fire roasted tomatoes
- 1 cup cooked rice brown or wild rice work well
- 2 tbsp fried herbs italian herbs or herbs de provance
- 1 tbsp fresh herbs I like basil
- salt & pepper
Instructions
- Begin by cooking rice if you don't have any already made. The microwavable bags are a real time saver if you are in a crunch.
- In a medium pot, heat a little oil and saute onion for a few minutes. Add garlic and a large pinch of salt. Cook for 30 seconds.
- Add dried herbs and tomato paste. Coat onions. Add broth, rice, and canned tomtoes.
- Simmer for 10 minutes. Serve with any toppings you like
