A sheet pan dinner doesn’t get much easier! And it’s so delicious.
A friend recently asked if I could do some jazzed up Trader Joe’s recipes. I knew just where to start. We like the sweet potato gnocchi but we love it when it’s cooked on a sheet pan with greens and vegetarian sausage. Drizzle some pesto over and bam, it’s a super simple, quick, and totally yummy dinner. I also love that this takes a simple frozen dinner, the gnocchi, and adds a big nutritional boost. The vegetarian sausage gives this a protein boost, and the greens (brussels and kale) add some much needed vegetables.
Although I use all Trader Joe’s ingredients, 5 to be exact, you can find the ingredients in most grocery stores. So lets talk about which five ingredients you need.
Sweet potato gnocchi – while this is probably the one ingredient I recommend getting from Trader Joe’s, you can use gnocchi from any store. And it doesn’t necessarily have to be sweet potato, though again, I do recommend this. Works so well with the kale and shredded brussel sprouts.
Vegetarian Sausage – 1 package or 4 sausages of vegetarian sausage. These are pretty easy to find at any grocery store.
Greens – I like to use a bag of shredded brussel sprouts. But if you can’t find the shredded brussel sprouts, just get the regular ones and shred them or thinly slice them. I also use kale. Make sure to take off the stems and just use the leaves.
Pesto – This is going to bring it all together after it’s baked. Definitely not exclusive to Trader Joe’s, you can find it anywhere.
You will need a large baking sheet. Spread the gnocchi out, I usually keep it on one side. Chop the sausage up and add that to the baking sheet. You’ll bake it, then remove it, add the greens, and bake just a little but longer. Remove and drizzle with the pesto. Toss one more time to spread the pesto, then enjoy!
Sheet Pan Pesto & Sweet Potato Gnocchi with Greens and Veggie Sausage

Ingredients
- 1 package sweet potato gnocchi I love the one in the frozen section from Trader Joe's
- 1 package vegetarian sausage, sliced 4 veggie links (12oz)
- 1 package shredded brussel sprouts Whole brussels work, just shred or thinly slice them
- 2 handfuls large handfuls of kale, cut or ripped into small pieces. stems removed I like using curly kale
- 1/4 cup pesto
Instructions
- Heat oven to 450.
- On a large sheet pan, spread out the gnocchi on one side, then the sliced sausage on another. Bake for 10 minutes
- Remove sheet pan and spread the shredded brussel sprouts and kale over pan. Gently toss with sweet potato and sausage, then spread out again. Bake for another 5 minutes. Remove.
- Spoon the pesto over the pan and give it another gentle toss to coat it all with the pesto. Enjoy!
