One of the most requested breakfast foods from my little ones is waffles. Since we make them quite often I feel the need to not only make them delicious but also healthy. Oats are a great source of fiber, antioxidants, and vitamins. I also use cottage cheese for a protein boost. If that’s not your thing, you can also add Greek yogurt.

I wish I could send this recipe back in time to my mama. Waffles might not seem like a quick breakfast, but the batter comes together quickly and you can easily big batch these. They make a great snack too!
Ingredients needed for the Waffles
- Eggs – 5 in total
- Oats – I use old-fashioned rolled oats
- Cottage cheese
- Maple syrup
- Vanilla extract
How to make the Waffles
- Place everything into a large blender. Blend until smooth
- Warm a waffle iron and spray with cooking oil.
- Place about 1/4 cup of batter into the center (depending on the size of the waffle iron). Cook until done.
- Add whatever toppings you like.
- Place leftovers wrapped in the fridge and reheat when ready to enjoy
Oat Flour Waffles
Ingredients

- 1 tsp vanilla extract
- 1 tbsp maple syrup more for sweeter
- pinch of salt
