Now that I have kids I am on a quest to treat them to my favorite cake on special occasions too, like their birthdays. But being a busy mom I had to find an easy way to make one. How do three ingredients from the freezer isle sound? Perfect for me! Use whichever ice cream flavor you like. I’m partial to cookies and cream.
Ingredients needed for the Ice Cream Cake
- Frozen pound cake – Sara Lee makes the best
- Ice Cream – pick your favorite flavor. You will need 3-4 cups
- Cool Whip – Also from the freezer isle
How to make the Ice Cream Cake
- Defrost the pound cake for at least 15 minutes so you can cut it.
- Cut the cake horizontally in three slices
- In the cake tin. Lay a long piece of plastic wrap or parchment paper, enough to wrap around the cake at least once.
- Lay one piece of cake down. Spread one heaping cup of softened ice cream. Layer the second slice of cake. Spread another heaping cup of ice cream. Last cake layer and one more cup of softened ice cream.
- Wrap in plastic tightly and place in the freezer for at least 2 hours.
- When you’re ready to serve, spread a thick layer of cool whip on the top. Sides too if you want. You can add sprinkles or any other toppings. Cut and serve!

- 1 container cool whip
