I developed a total sweet tooth during my pregnancy. I’m typically a savory person, but I needed a sweet treat almost every night. Just a little nibble of something sweet would suffice. Some of my favorite treats are dates, a bowl of homemade vanilla ice cream, and these PB banana bites.
It’s quite simple. Cut a couple bananas into 1/2 inch slices. Lay on a tray in a single layer and freeze for at least an hour. Remove and spread a thin layer of peanut butter on half the slices. Top with another slice of banana. Melt about 1/4 cup chocolate with a little (1tbsp) of coconut oil. Take each stack and either dip half in chocolate or cover the whole bite. You can also sprinkle with some chopped nuts or granola. Place in freezer. Remove when you need a sweet treat!
