We’ve been loving these cookies and baking them a bunch. It’s chocolate chip banana bread in cookie form with the faintest hint of almond. Of course you could skip the almond extract but it really adds a lovely surprise to these cookies.
I love these cookies for a sweet treat at night, but you could treat yourself for breakfast too. I mean banana bread is a breakfast food too right?
Almond Banana Bread Cookies
Ingredients
- 3 mashed very ripe bananas You want super rip, spotty bananas
- 2 tbsp maple syrup
- 1 tsp almond extract *not necessary but it really adds something special
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350F
- In a medium bowl, mix mashed banana with almond extract and maple syrup.
- Stir in the remainder of the ingredients.
- Spoon onto a greased baking sheet. Bake for 25 minutes. Remove and cool on baking sheet. Store leftovers in the fridge for up to 5 days.
