Pistachio Chocolate Chip Cookies with a Hint of Espresso

Hello, fellow cookie lovers! Today, I’m thrilled to share a recipe that has quickly become a family favorite in our home—Espresso Pistachio Chocolate Chip Cookies. This delightful treat combines the rich flavors of chocolate and pistachios with a subtle hint of espresso, making each bite absolutely irresistible.

The Magic of Espresso in Baking

Adding espresso powder to cookie dough isn’t just about infusing coffee flavor—it’s about enhancing the chocolate taste. In this recipe, the espresso powder amplifies the rich, deep tones of the chocolate, providing a complex flavor profile that complements the nuttiness of the pistachios beautifully.

Why Vanilla Bean Paste?

I opted for vanilla bean paste instead of regular vanilla extract. The paste not only adds those lovely vanilla specks throughout the cookies but also offers a more intense vanilla flavor that elevates the overall taste of the cookie dough. However, vanilla extract works fine if that’s all you have!

Ingredient Breakdown

• Pistachios: These are key for adding a crunchy texture and nutty flavor. If you’re not a fan or allergic, swapping them for walnuts provides a great alternative without compromising on texture.
• Espresso Powder: A teaspoon of this goes a long way, enhancing the chocolatey notes while introducing a subtle coffee flavor that’s sophisticated yet not overpowering.
• Chocolate Chips: I use a mix of semi-sweet chips and chopped-up dark chocolate for the top.
• Vanilla Bean Paste: This brings a rich, gourmet vanilla flavor that’s visibly flecked throughout the cookies.

Ingredients

  • 1 cup shelled pistachios, finely chopped
  • 2 cups all-purpose flour (240 grams)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tsp espresso powder
  • 3/4 cup unsalted butter, melted
  • 1/4 cup cream cheese, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract or vanilla bean paste
  • 1 cup semi-sweet chocolate chips
  • Optional: chopped dark chocolate and more pistachios for topping

How to Make Chocolate Chip Pistachio Cookies

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. I use two baking sheets, one for placing the dough while they refrigerate and one for baking.
  • Mix Dry Ingredients. In a medium bowl, whisk together the flour, baking soda, espresso powder, and salt. Set aside. ** make sure to spoon your flour into the measuring cup to avoid overpacking. Best to weigh flour
  • Combine Wet Ingredients. In a large bowl, whisk the melted butter, cream cheese, brown sugar, and granulated sugar until well combined. Beat in the eggs, one at a time, then stir in the vanilla extract or vanilla bean paste
  • Gradually stir the flour mixture into the wet ingredients until just combined. Avoid overmixing.
  • Fold in Pistachios and Chocolate Chips.
  • Using a cookie scoop or spoon, drop dough by tablespoonfuls onto the prepared baking sheets. Do not flatten; they will spread on their own. Refrigerate for 30 minutes or even overnight.
  • Add chopped dark chocolate to top right before baking. I also add a tiny bit of flakey sea salt
  • Bake for 10-12 minutes (mine take 12 minutes), or until the edges are golden and crispy but the centers are still soft.
  • When they are done, top with more chopped pistachios if you like. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

    Why don’t you make this recipe printable in the normal way? I do not want to install the Printable PDF, as I am of a certain age, and do not trust it! Of it was printable in the normal way, I would love to try it.

    I just made these cookies and I have a comment/questions. I put the dough on the cookie sheet, into the fridge for 30 minutes. Meanwhile I heated my oven to 350 about 19 minutes before taking them out of the fridge as it takes that long for my oven to heat to temp. I then put them directly from the fridge to the oven. They were definitely not cooked after 12 minutes, and I think because the pan and cookies were still cold. I baked them another 10 minutes, then they were cooked. That’s my comment – these are my questions: Would it be better to take them out of the fridge and leave them to get to room temp? Or would it be better to lengthen the cooking time if you put them directly into the oven?

This breakfast burrito is one of my favorite ways This breakfast burrito is one of my favorite ways to start the day. Crispy bacon, mashed avocado, a folded cheesy egg, and a hash brown all wrapped up in a carb-balanced tortilla and crisped in the pan. It’s simple, it’s filling, and delish! 

large carb-balanced burrito-sized tortilla
1 egg
Shredded cheese
2 slices bacon
1/2 avocado, mashed
1 hash brown

Instructions:
Cook the bacon and chop it up. Mash the avocado and season with salt, mix in the bacon, and spread it on the tortilla. Cook the egg with a little shredded cheese, letting it cook mostly through, then fold it. Top the avocado with the hash brown, then add the folded egg. Fold the tortilla into a burrito and crisp it in a pan.
High-Protein Burrito Bake If you love taco night High-Protein Burrito Bake 

If you love taco night but want something a little lighter and higher protein, this one’s for you. Folded burritos baked in a ring in the cast iron — easy weeknight dinner and meal-prep friendly

serves 6
1 lb lean 93/7 ground beef
1 packet taco seasoning
1/2 onion
3.5 oz shredded cheddar + 2 tbsp for the meat mix
1/3 cup Greek yogurt (swap for sour cream if you want)
1 can fat-free refried beans
6 low-cal carb-balanced tortillas (70 cal each) @missionfoodsus 
Queso

How to make it:
Brown the beef, add taco seasoning, let it simmer
Stir in Greek yogurt + 2 tbsp shredded cheese
Cut a slit from center to edge of each tortilla
Layer beans on one section, meat on another, nacho cheese on the last
Fold into a triangle
Arrange in a ring in your cast iron skillet
Top with shredded cheese 
Bake at 375°F for 15 minutes

We top with sour cream, shredded lettuce, salsa, and guacamole

Blistered cherry tomatoes, creamy white beans, cottage cheese and plenty of crusty sourdough. It’s simple, hearty, satisfying and has plenty of protein without feeling like a “high-protein” meal.

Here’s how I make it:

A big handful of cherry tomatoes
1 can white beans, drained and rinsed
Olive oil
Salt + pepper
Squeeze of fresh lemon
Good Culture cottage cheese @good_culture 
Toasted sourdough for serving

Heat a good drizzle of olive oil in a skillet and add the cherry tomatoes. Let them cook until blistered and starting to burst, then give them a light mash.

Add the white beans, season really well with salt and pepper and finish with a squeeze of lemon. Let everything warm together for a few minutes.

Spoon into a bowl, add plenty of cottage cheese on top and serve with toasted or crusty sourdough for scooping.

So simple. SO good.
