Tomato Tart

I couldn’t let summer pass workout sharing this delicious heirloom tomato tart! One of my new favorite easy recipes.

This tart has easily become one of our collective favorite summer recipes. It started when I saw a picture of a tart loaded with fresh cherry tomatoes all on top of a delicious pastry. When I looked into tartes further, most involved hand making a pastry dough. Homemade dough. It sounds great but I wanted something quick and easy. It’s summer, recipes should be easy. That’s where this recipe comes in.

As much as a homemade dough sounds great, puff pastry works well in this recipe too. You just give it a quick bake while you sweat your tomatoes with a little salt. You’re going to then broil the tomatoes for a little. Then you load up the lightly baked pastry dough with shredded cheese, herbs, and tomatoes. Give it another bake for about fifteen minutes. This might seem like a lot of steps but I assure you this comes together quite easily.

Let’s talk about the layers of the tart. I start with a puff pastry baked to crispy, perfection. Then you layer cheese. I used a smoked cheddar but I’ve also used smoked Gouda and a mozzarella blend. I really like the smoked cheese is for this. It really works well with heirloom tomatoes. The garden is bursting with delicious, juicy heirloom tomatoes, so that’s what we’re using. You could use something smaller, whatever you have, whatever is fresh. While your pastry is baking you’re going to salt the cut up tomatoes to sweat out some of the water so your pastry doesn’t get soggy. Then you put all the tomatoes on a baking sheet and be

oil for about fifteen minutes. Take the pastry that’s been lately baked, spread over your shredded cheese then a thick layer of tomatoes. I topped all of this with herb and oil mixture. I use fresh basil, parsley, and olive oil it adds the perfect fresh touch to this to the tart.

Bake all this in the oven, remove, slightly cool and serve either hot or at room temperature. It is delicious and everyone will love it. It’s kind of like a summer pizza because it’s light with the puff pastry and has all the delicious toppings make a pizza so yummy.

Ingredients Equipment Method Notes

Ingredients
  

  • 1 puff pastry at room temp
  • 1 cup loosly packed herbs parsely and basil is what I use
  • 2 tbsp olive oil
  • 3-3.5 pounds tomatoes I use heirloom when they are in season
  • 1 cup smoked cheddar cheese or cheese of choice

Equipment

  • preferably 2 baking dishes, 1 can work though
  • small mixing bowl
  • clean dish towel

Method
 

  1. Preheat over to 375. Slice the tomatoes in 1/4 inch slices while oven warms up.
  2. Spread the puff pastry on a greased baking sheet. Generouly poke the pastry with a fork. Bake for 15 minutes.
  3. While the pastry is cooking, spread the tomatoes on a clean kitchen towel. Sprinkle slices with salt to sweat out excess liquid.
  4. Remove the pastry when times is up and turn oven up to 425F. Pat the tomatoes with a clean towel to remove water. Spread on another baking sheet and bake for 15 minutes.
  5. While tomatoes are baking, mince the herbs, almost to a paste. Stir in the olive oil with a pinch of salt and pepper.
  6. Remove the tomatoes. Begin layering the tart. First spread the shredded cheese. Then layer on the tomatoes. It's fine to overlap, they shrink up when they cook. Spread as much as you can. Drizzle the herbs over the tomatoes. Bake for 12 minutes. Serve warm or even room temp. SO delicious

Notes

I love using heirloom tomatoes, but whatever you have can work.  If you have smaller ones, you don't have to quarter them.  halves work too.  Just cut enough tomatoes to cover the tart.

They’re packed with protein from eggs, sausage, cottage cheese, and cheese.

Ingredients:
1 lb breakfast sausage
4 eggs (scrambled)
1 egg (mixed in)
1/2 cup cottage cheese
1/2 cup low-fat shredded cheese
1/2 cup all-purpose flour
1 tsp baking powder
1/2 tsp garlic powder
Salt + pepper

Cook the breakfast sausage in a skillet until browned. Push to one side and scramble 4 eggs.

Add sausage + eggs to a bowl with 1 more egg, cottage cheese, shredded cheese, flour, baking powder, garlic powder, salt, and pepper. Mix until combined.

Scoop with a 2 tbsp scoop onto a parchment-lined baking sheet.

Bake at 375°F for about 18 minutes, or until golden. Makes about 15 biscuits.

1 lb ground beef
1 small yellow onion, diced
1/2 cup uncooked white rice
1 cup blended cottage cheese
1 (15 oz) jar salsa
1 cup shredded cheddar or taco cheese blend
1 package taco seasoning
*chips, sour cream, avocado for topping and scooping

Preheat oven to 375°F. In an oven-safe skillet, cook ground beef and onion on medium heat until beef is browned.

Stir in taco seasoning. Add salsa, cottage cheese, the rice, then 1/2 cup water. Mix well.

Cover tightly with foil and bake for 25-30 minutes

Remove from oven, top with cheese. Serve with sour cream, avocado, and plenty of chips for scooping

Save this for your next quick dinner night.

The sauce is the real star here. Savory, rich, and packed with flavor from the miso, garlic, soy sauce, and ginger.

2 lb chuck roast
Salt + pepper
1 tbsp olive oil
2 tbsp white miso paste
2 tbsp soy sauce
1 tbsp rice vinegar (or apple cider vinegar)
1 tbsp brown sugar or honey
1 tbsp fresh ginger, grated
3 cloves garlic, minced
1½ cups beef broth
1 tsp sesame 

Mashed potatoes, for serving

Season the chuck roast well with salt and pepper. Heat olive oil in a Dutch oven or heavy pan and sear the roast on all sides until deeply browned.

In a bowl, whisk together the miso paste, soy sauce, vinegar, brown sugar, ginger, garlic, beef broth, and sesame.

Pour the sauce over the roast, cover, and braise at 300°F for about 3 to 3½ hours until the beef is fall apart tender.

Remove the meat and shred or slice it. Simmer the sauce on the stovetop for 5–10 minutes until thickened and glossy.

Serve over mashed potatoes and spoon all that sauce right on top.

This might be one of my favorite easy dinners lately. The buttery garlic shrimp, blistered tomatoes, cilantro lime rice, and salty feta all work so well together

You’ll need 
1 pound shrimp
1 pint cherry tomatoes
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic minced
juice of 1 lemon
2 cups cooked rice
1/4 cup chopped cilantro
juice of 1 lime
crumbled feta for topping 
salt, and pepper.

Cook the rice and mix with chopped cilantro, lime juice, and a little salt. Add olive oil to a hot skillet and cook the cherry tomatoes until blistered and softened. Push the tomatoes to the side of the skillet, then add butter, garlic, and shrimp. Season with salt and pepper and cook until the shrimp are pink and lightly golden. Squeeze in the lemon juice and mix everything together with the tomatoes. Spoon over the cilantro lime rice and top with feta.
