Vanilla Mint Protein Smoothie

A vanilla mint protein smoothie. It’s simple and delicious, very refreshing and nutritious. Fresh mint, a good vanilla protein powder, and just a couple of other pantry staples create a perfect meal or snack.

I’ve been on a big protein smoothie kick. It’s a midday treat and pick me up that I look forward to almost every day. The base for this kind of smoothie is simple; vanilla protein, this is my favorite, spinach (any green you like to use works) some kind of milk, I like almond milk, and a little more flavor. Cinnamon, vanilla, and in this case fresh mint, help give it that extra pop. Iq also love adding chia seeds or flax seeds, often both.

I’m not going to lead you on and protest this is a healthy shamrock shake because it’s not. There really is no healthy with that shake. It’s LOADED with carbs and sugar. The base is ice cream with artificial flavorings added. However, this is minty, refreshing, green, and can totally be festive for St. Patty’s. I also add a little sprinkle of these crushed double chocolate cookies on top. While I prefer Simple Mills for their ingredients, you can use whatever you like! An oreo type cookie or chocolate graham cracker is a good idea.

Ingredients needed for the Protein Smoothie

  • Vanilla protein powder
  • Milk of choice – I like a neutral tasting one like almond milk
  • Spinach
  • Fresh mint
  • Chia seeds
  • Optional chocolate cookies or oreo types
  • Ice

How to make a Vanilla Mint Protein Smoothie

  • Place all the ingredients except the cookies in the blender, with the milk at the bottom. I recommend using a high speed blender
  • Blen until smoothie. Pour and top with cookies

Why we love this recipe…

  • Protein packed to keep you full and satisfied
  • A good serving of veggies with 2 large handfuls of spinach
  • Low in sugar. I don’t use banana or any other fruit in this smoothie (though you can if you like) which helps keep this low in sugar to keep blood sugar balanced.
  • Simple ingredients that make a yummy treat or snack. Helps crowd out sugar cravings later in the day

Tips for the Vanilla Mint Protein Smoothie

  • Use a good protein powder. I love this one because it’s delicious and doesn’t taste artificially sweet.
  • Fresh mint is delicious in this but mint or peppermint extract can be used too. Just a little drop goes a long way.
  • We add the crushed cookies for a fun twist but it definitely doenst need it.
  • I don’t often add any fruit like banana to keep it lower in sugar, but if you want, it’s defnitley a good addition. Frozen banana makes it creamy and sweeter.

Ingredients Method

Ingredients
  

  • 1 scoop vanilla protein powder
  • 1 1/2 cups almond milk or any milk of choice add more to get the consistency you want
  • 6 fresh mint leaves, more or less
  • 2 large handfuls of spinach or 1 cup frozen
  • 1 tbsp chia seeds
  • large handful of ice
  • 1-2 small chocolate or oreo type cookie Optional for adding crushed to the top

Method
 

  1. Place everything except the cookies in a high speed blender, liquid first.
  2. Blend until smooth. Pour into a cup and top with crushed cookies.

The first recipe in my Summer Side Dish Series is The first recipe in my Summer Side Dish Series is this creamy herby potato salad, and itโ€™s going to be on repeat all season long.

Itโ€™s everything I want in a potato saladโ€”tender potatoes, crispy bacon, fresh herbs, a creamy Greek yogurt dressing, and just enough mayo to keep it tasting like the classic version we all grew up with.

2 pounds baby Yukon gold potatoes, halved if large
1 tablespoon pickle brine or white wine vinegar
1 tablespoon Dijon mustard
3/4 cup plain Greek yogurt
1/4 cup mayonnaise
1 garlic clove, grated
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
4 slices bacon, cooked crispy and crumbled
3 green onions, thinly sliced
1/4 cup chopped fresh chives
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
1 celery rib, finely diced

Place potatoes in a large pot and cover with cold water. Season generously with salt. Bring to a boil and cook until fork tender, about 12-15 minutes.

Drain well and spread onto a baking sheet.

While still warm, toss potatoes with the pickle brine and Dijon mustard. Let cool for about 10 minutes.

In a large bowl whisk together Greek yogurt, mayonnaise, garlic, lemon juice, salt, and pepper.

Add potatoes, bacon, celery, green onions, chives, parsley, and dill. Toss gently until coated.

Refrigerate at least 30 minutes before serving.

Finish with extra herbs and bacon right before serving.

For this combination, hereโ€™s what I did:
Butter sourdough then grill on skillet. Add a layer of spread, I used mayo. Top with prosciutto then salami and turkey if you want. Arugula, balsamic glaze, and hot honey. Top with a ball of prosciutto.

Made with ripe bananas, Greek yogurt, maple syrup, egg, vanilla, oil, flour, cinnamon, baking soda, baking powder, salt, and mini chocolate chips.

I blended 1/2 cup cottage cheese with 1 egg, a little Italian seasoning and garlic powder, then spread it onto parchment paper. I topped it with turkey pepperoni and baked it until golden and set.

Once it cooled slightly, I stuffed it with a chopped Caesar salad and folded it up like a wrap. The result is crispy, cheesy, packed with protein, and one of my favorite lunches lately.

1/2 cup @good_culture cottage cheese
1 large egg
1/2 teaspoon Italian seasoning
Pinch garlic powder
Turkey pepperoni
Chopped romaine
Caesar dressing
Fresh Parmesan

Instructions:
Blend the cottage cheese, egg, Italian seasoning, and garlic powder until smooth. Spread onto a parchment-lined baking sheet and top with turkey pepperoni. Bake at 400ยฐF for 18-22 minutes or until set and lightly golden. Let cool for a few minutes. Toss chopped romaine with Caesar dressing and Parmesan. Fill the wrap with the salad, fold, and enjoy. *make sure you spread it evenly to avoid burning patches.

These might be one of my favorite taco recipes Iโ€™ve made lately. Tacos de papa filling mixed with taco-seasoned beef, stuffed into soft flour tortillas and air fried until golden and crispy.

My boys gobble these up!
