Begin by chopping up the salmon filets. You want small diced pieces, a little smaller than a dime. You could also pulse it in a food processor, but that's more work, more dirty dishes. I just take a sharp knife and dice, almost as I would herbs.
Place in a bowl, along with the remaining ingredients. Stir until combined then make 4 patties from the mixture.
In a frying pan, heat a little oil, about a tablespoon, or a little butter. I sometimes do both. Then cook each patty for about 4 minutes per side.
These are delicious as it. But we usually make a little spicy aioli for the top along with avocado and slaw.
