Spicy Tuna Melt

Ingredients
  

  • 2 3oz cans of drained tuna
  • 2 slices sourdough or bread of choice
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1 diced jalapeno seeds removed if you don't like it spicy
  • 1/4 cup mayo add more if you like it creamier
  • 1 tbsp dijion mustard
  • squeeze of lemon juice from a half lemon
  • salt and pepper to taste
  • Sliced cheddar I like white cheddar but use whatever cheese you like!

Instructions
 

  • Start by toasting the bread and preheat the broiler.
  • Stir together the tuna , celery, onion, jalapeno, mayo, mustard, lemon, and a little salt and pepper.
  • When the bread is toasted, spread the tuna over each slice. Top with cheese. Broil for a couple minutes until cheese is melted.
