Butterscotch Blondies

Ingredients
  

  • 1 1/2 cups almond flour
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 4 tbsp melted and cooled butter
  • 2 room temp eggs
  • 1/4 cup maple syrup
  • 1/2 cup sugar or coconut sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup butterscotch chips plus more for topping if you want

Instructions
 

  • Preheat oven to 350.
  • In a large bowl, mix the dry ingredients. The flours, baking powder, and salt.
  • In a medium bowl, whisk the egg, butter, sugar, and vanilla. Pour the wet ingredients into the dry and stir until just mixed. Stir in the butterscotch chips.
  • Line an 8x8 with parchment paper and pour in batter. Smooth, top with more butterscotch chips if you want, and bake for 35-40 minutes.Remove, cool, then cut into squares.
