Butterscotch Blondies

Ingredients
  

  • 1 1/2 cups almond flour
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 4 tbsp melted and cooled butter
  • 2 room temp eggs
  • 1/4 cup maple syrup
  • 1/2 cup sugar or coconut sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup butterscotch chips plus more for topping if you want

Method
 

  1. Preheat oven to 350.
  2. In a large bowl, mix the dry ingredients. The flours, baking powder, and salt.
  3. In a medium bowl, whisk the egg, butter, sugar, and vanilla. Pour the wet ingredients into the dry and stir until just mixed. Stir in the butterscotch chips.
  4. Line an 8x8 with parchment paper and pour in batter. Smooth, top with more butterscotch chips if you want, and bake for 35-40 minutes.Remove, cool, then cut into squares.
