Carrot Cake Loaf with Whipped Cream Cheese Frosting

Ingredients
  

For the Carrot Cake Loaf:

  • 190 grams all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cardamom
  • 1/8 tsp ground pepper finely ground
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup light brown sugar packed
  • 1/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups grated carrots finely grated
  • 1/2 cup walnuts choppped, or pecans

For the Cream Cheese Frosting

  • 4oz cream cheese softened
  • 2 tbsp unsalted butter softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heaving whipping cream

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper
  • In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.   • Add eggs and vanilla and mix. Fold the dry ingredients into the wet mixture until just combined. Gently stir in carrots, walnuts. .2 eggs 1 1/2 tsp vanilla extract 1 1/2 cups grated carrots 1/2 cup walnuts
  • Pour batter into the loaf pan and bake for 45-55 minutes, or until a toothpick comes out clean. Let cool for 10 minutes in the pan, then transfer to a wire rack.
  • Beat cream cheese and butter until smooth. Mix in powdered sugar and vanilla. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture for a light, fluffy texture. Spread the frosting over the cooled loaf.
