Cheese Stuffed Chicken Bites

Ingredients
  

  • 1 pound ground chicken
  • 6 mozzarella string cheeses cut in half *Low moisture
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg
  • 1 cup Italian style panko breadcrumbs
  • ½ cup grated parmesan cheese
  • olive oil spray
For serving
  • marinara sauce
  • ranch dressing

Method
 

  1. Place mozzarella pieces in the freezer for about 15 minutes while preparing the chicken mixture
  2. In a bowl mix the ground chicken Italian seasoning garlic powder onion powder salt and pepper until evenly combined
  3. Divide the chicken into 12 portions and flatten each portion into a thin rectangle in your palm
  4. Place a mozzarella piece in the center and wrap the chicken around it sealing the edges completely
  5. Place the wrapped bites on a plate and refrigerate for about 10 minutes to help them firm up
  6. Prepare a breading station with one bowl of beaten egg and another bowl with panko and parmesan mixed together
  7. Dip each chicken wrapped piece into the egg then coat in the panko parmesan mixture pressing gently to adhere
  8. Preheat the air fryer to 375 degrees
  9. Place the chicken bites in the air fryer basket leaving space between them and lightly spray with olive oil
  10. Cook for 10 to 12 minutes flipping halfway through until golden brown and the chicken reaches 165 degrees internally
  11. Let them rest for a few minutes before serving so the cheese sets slightly
Oven Method
  1. Preheat oven to 425 degrees
  2. Place the breaded chicken bites on a parchment lined baking sheet and spray lightly with olive oil
  3. Bake for 18 to 22 minutes flipping halfway through until golden and cooked through
