Homemade Strawberry Pop Tarts

Ingredients
  

For the dough

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 cup unsalted butter cold and cubed
  • 4-5 tbsp ice water

For the filling

  • 1 1/2 cups strawberries diced
  • 1 tbsp maple syrup or honey
  • 1 tsp lemon juice
  • 1/2 tbsp cornstarch
  • 1 tbsp water

For the glaze

  • 1/2 cup powdered sugar
  • 1 tbsp water use more to get desired consistancy
  • 1 tsp red food coloring or strawberry juice

Instructions
 

  • Combine flour, sugar, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs.

  • Add ice water, one tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and chill for 30 minutes.
  • Cook strawberries, honey (or maple syrup), and lemon juice in a saucepan over medium heat until the berries break down.

  • Stir in the cornstarch slurry (cornstarch mixed with water) and cook until thickened. Cool completely.

  • Roll out each chilled dough, one at a time, and cut into 8 equal rectangles, 16 total.
  • Place six rectangles on a baking sheet and spoon 1 tablespoon of filling onto each. Cover with the remaining dough rectangles and press the edges with a fork to seal. Prick the tops with a fork.
  • Bake at 375°F for 20-25 minutes, or until golden brown. Cool completely before glazing.
  • Mix powdered sugar, milk, and strawberry juice until smooth. Spread or drizzle over the cooled pop tarts.
