1tspbaking soda
1/2tbsp pumpkin spice
1/4 tsp salt
1cuppured pumpkinpure pumpkin, not pumpkin pie mix
1/4cupmelted, cooled butter
1/2cupmilk or non dairy milkI use almond milk
1tspvanilla extract
3/4 cupsugar
2eggs
Instructions
Preheat oven to 350.
In a medium mixing bowl, whick dry ingredients. Flour, baking powder, baking soda, pumpkin spice, salt
In a larger bowl, mix wet ingredients, mumpkin, oil, milk, vanilla, sugar, egg
Mix the flour into the wet ingredients until just combined. Pour into parchment lined or greased loaf pan.
Bake for 50-55 minutes. Allow to completely cook before cutting.
Notes
Before tossing into the oven I take a couple of teaspoons of coconut sugar or regular sugar mixed with 1/2 teaspoon of cinnamon and sprinkle over the top. It's a delicious addition.
