Ingredients
  

Coffee Cake Ingredients

  • 2 cup almond flour
  • 1 tsp baking powder
  • 1 tbsp pumpkin spice
  • 1/4 cup tapioca flour
  • 1/4 tsp salt
  • 3 eggs
  • 1 cup pumpkin puree
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1/4 cup sugar - either coconut or regular

Struesel Ingredients

  • 1/2 cup almond flour
  • 1/3 cup finely chopped pecans
  • 1/4 cup sugar I like coconut sugar for this
  • 1/4 cup afotened butter not melted!
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350.
  • Mix the dry ingredients in a bowl. The first five ingredients Mix the wet ingredients in a larger bowl. The pumpkin puree through the sugars.
  • Pour the dry ingredients into the wet bowl and mix until combined.
  • Pour into a greased or parchment paper lined 9x9 (8x8 works too) pan.
  • Make the streusel topping by mixing streusal ingredients in a bowl. You can mix with a fork or your fingers. Pour over the cake mix. Bake, cool, enjoy
