Coffee Cake Ingredients
- 2 cup almond flour
- 1 tsp baking powder
- 1 tbsp pumpkin spice
- 1/4 cup tapioca flour
- 1/4 tsp salt
- 3 eggs
- 1 cup pumpkin puree
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 1/4 cup sugar - either coconut or regular
Struesel Ingredients
- 1/2 cup almond flour
- 1/3 cup finely chopped pecans
- 1/4 cup sugar I like coconut sugar for this
- 1/4 cup afotened butter not melted!
- 1 tsp cinnamon
Preheat oven to 350.
Mix the dry ingredients in a bowl. The first five ingredients Mix the wet ingredients in a larger bowl. The pumpkin puree through the sugars.
Pour the dry ingredients into the wet bowl and mix until combined.
Pour into a greased or parchment paper lined 9x9 (8x8 works too) pan.
Make the streusel topping by mixing streusal ingredients in a bowl. You can mix with a fork or your fingers. Pour over the cake mix. Bake, cool, enjoy
