We love a good veggie burger in our house and these are at the top of the list. Since I first made them, we’ve already had them several times in only a couple weeks. That to me means they’re a crowd favorite.
I think aside from how good they are, I love them because they are so simple. Easy, whole ingredients is what I need more nights. Plus, we can make a bunch for later in the week or for freezing. If you make a big batch of quinoa over the weekend, you really cut down the time.
1/2 cup diced onion
1/2 cup diced carrot
2 garlic cloves
1 cup cooked quinoa
1 can chickpeas, drained and rinsed
1/4 buckwheat flour (regular flour works too)
1 egg
2 tbsp Franks hot sauce – or other buffalo sauce
salt & pepper
Start by sautéing the onion, garlic, carrot, and a good pinch of salt until veggies have softened. About 5 minutes
While that’s cooking, add the remaining ingredients to a food processor, with some salt and pepper. Add the veggies when they are done.
Give everything a good whirl, until it’s combined.
Form into about 6 patties. I like to refrigerate for about 30 minutes, but that’s not necessary.
Heat some a good glug of oil and butter (or vegan butter)over medium heat. The butter is optional but I think it gives a good crisping to them.
Cook for about 4-5 minutes per side.
Serve in a bun or over greens. Add some fixings like avocado and tomato too if you’d like.
