White Bean Chili

I get asked quite often about how to stock a pantry. Items that are must haves for me include a variety of canned beans, quinoa, and diced green chilies. The last item might seem odd but they are so good for adding flavor to savory dishes, especially chili. A few cans of white beans, green chilies, quinoa, some broth, veggies and seasoning make up the base for this delicious chili.

The quinoa provides a nice heartiness to a white chili that typically includes chicken. Quinoa combined with a variety of beans packs a protein punch. It’s a great reminder that plant based and meat free dishes aren’t just rabbit food.

This recipe makes a good amount, about 6 servings. Leftovers are great, only get better as it sits, or freezing works too!

 

White Bean Chili

Ingredients
  

  • 1 onion diced
  • 2 celery ribs diced
  • 4 garlic cloves minced
  • 2 4oz cans diced green chilies
  • 2 cans white beans, like cannellini or great northern drained and rinsed
  • 1 can gabanzo beans drained and rinsed
  • 1 can organic corn drained and rinsed
  • 4 cups vegetable broth
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp coriander
  • 3 tsp chili powder
  • 1 tsp paprika
  • ¼ tsp nutmeg
  • ½ cup quinoa
  • 1 lime

Method
 

  1. Begin by heating up a large stock pan then add a little oil.
  2. Saute onion with a pinch of salt for a few minutes, until soft. Add celery and garlic, salt again. Cook until soft.
  3. Add all the seasoning, with another good pinch of salt, and coat veggies. Add green chilies, beans, corn, quinoa, and broth. Bring to a boil then reduce heat and cook for about 30 minutes. Stir after about 20 minutes, but try to keep covered for all the other time. Around the 20 minute mark I also like to take a potato masher and give it a couple mashes to thicken up the soup.
  4. Stir in the juice of 1 lime at the end. Adjust for salt and pepper if needed
  5. Serve a big bowl with a dollop of yogurt, some avocado, hot sauce and fresh cilantro. Totally optional but so good!

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in —  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it — no sliding eggs, no mess. 

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

Sweet apple, crunchy celery, and a lightened-up dressing come together for something that’s fresh, filling, and way better than the usual mayo-heavy version. Serve it on a bed of lettuce, in a wrap, or with crackers. Make sure you’re following @gina_gibson_cooks for more recipes. 

Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.
