We all love tacos right? Well, let’s make them more fun and into the best little bite-sized appetizer. Taco cups! I’m on a mission this fall to make lots of football game-time and entertaining dishes that are just a bit healthier. One of the best things about football season and fall is all the events. And of course, that involves food! I’m taking some favorite dishes and trying to make them just a bit healthier.
Jump to RecipeSo these taco cups. Delicious and healthy. Why? They are loaded with all the good taco stuff and with protein from taco meat. Add some guacamole and you’ve got some healthy fat right there. They are smaller but filling and everyone loves them.
We start off by making the taco ‘shells’. I just take a muffin tin and layer in some wonton wrappers. If you can’t find those (which I couldn’t last time) just use egg roll wrappers and cut them into 4 pieces per sheet. Works the same! Cook your filling then layer it into the lightly cooked wrappers. Bake again, remove from the oven, add your favorite taco toppings, and enjoy! It’s that simple.
Ingredients needed for the Taco Cups
- Wonton or egg roll wrappers
- Ground beef or ground chicken
- taco seasoning
- Onion
- Garlic
- Taco toppings – cheese, guacamole, sour cream, whatever you like
How to make Taco Cups
- Start by filling a muffin tin with wonton or egg roll wrappers. Bake for a couple of minutes.
- Cook the taco meat
- Layer the taco meat into the taco shells/muffins. Bake
- Remove and top with your favorite taco toppings

Tips for the Chicken Salad
- You can cut and take out the seeds earlier on, then just bake it when you’re ready. Of bake early too and cut add the sauce and cheese when you are ready to serve
- Cook an extra one for easy meals later in the week.
- If you cook extra, change up the toppings with some meatballs, pesto, or a difference pasta sauce. Even plain is very good!
Taco Cups
Equipment
- 1 muffin tin
- 1 skillet
Ingredients
- 24 wonton wrappers or 6 egg roll wrappers cut into 4 3×3 squares
- 1 lb ground beef
- 1 medium onion, diced
- 2 garlic cloves minced
- 2 tbsp taco seasoning
- taco toppings like guacamole, cheese, sour cream
Instructions
- Preheat oven to 400.
- Prepare the taco meat by cooking the onion with a little salt for several minutes until soft.
- Add the garlic with the taco seasoning and cook for a minute. Add another pinch of salt.
- Add the taco meat and use a wooden spoon to break it down. Cook for 10 minutes until browned.
- To make the taco 'shells' layer two wonton pieces or two egg roll wrappers per muffin. Overlap to cover the bottom. They will hang over the edge slightly. Bake for 3 minutes. Remove then evenly fill with the taco meat.
- Bake for another 10 minites. Remove and let cook slightly. Top with whatever toppings you like!
