Parmesan Orzo with Spinach

Creamy, cheesy, spinach orzo pasta is the perfect side dish for any meal. A big bowl on its own works too. It’s just delicious.

This cheesy spinach parmesan orzo is the perfect comfort food! It’s creamy, cheesy, and packed with flavor. Plus, it’s easy to make and sure to become a family favorite.

This parmesan orzo with spinach dish is made in one pot. Easy and totally customizable. You can easily add more veggies and more cheese. The orzo cooks in one pot with broth, no draining, which makes it creamy from the start. The parmesan adds another element of creamy, plus nice and cheesy. Lastly, you stir in the spinach. I like to give the spinach a good chop so it’s in smaller pieces.

If you’re craving something healthy but comforting, this dish is great. This cheesy spinach parmesan orzo is the perfect balance of both! With a creamy sauce, savory Parmesan cheese, and nutrient-rich spinach, this dish is sure to satisfy your cravings. I love pairing it with salmon or baked chicken for a protein balance. Perfecto!

Ingredients


  • Orzo
  • Spinach
  • Parmesan
  • Chicken or vegetable stock
  • Lemon
  • Garlic
  • Cream Cheese
  • Butter and oil

How to make Parmesan orzo with spinach


  • In a large stock pot, heat butter and a little oil. Saute the onion for a few minutes until soft.
  • Add the garlic, season well with salt and pepper.
  • Add the orzo and toast for a couple of minutes.
  • Pour in the stock, bring to a boil, then reduce heat to a simmer. Cover the pot and allow to cook for 8-10 minutes.
  • Remove the lid, if the liquid is absorbed, it’s done. If not, allow to cook for another minute. Stir through parm, heavy cream, then spinach. Give a squeeze of half a large lemon, and adjust the seasoning if needed.

Tips and common questions for spinach orzo


  • How to serve this pasta dish. I love this alongside a protein like salmon or chicken. You can also add more veggies, like broccoli or peas, to make it even more substantial.
  • Can this be made ahead of time? Yes, but when warming it up, you may want to add a little more broth and cheese to bring back the creaminess.

Creamy Parmesan Orza Pasta with Spinach

Ingredients
  

  • 1 lb box orzo
  • 1 32oz box chicken stock (or vegetable stock)
  • 1 large onion, diced
  • 4 garlic cloves minced
  • 5 oz baby spinach, chopped I like chopping it pretty small
  • 4 tbsp cream cheese
  • 1 cup grated parmesan cheese
  • 1 small lemon
  • garlic powder
  • salt and pepper
  • 1 tbsp butter
  • 1 tbsp olive oil

Method
 

  1. In a large stock pot, heat butter and oil on medium. Saute the onion for a few minutes until soft.
  2. Add the garlic, season well with salt and pepper and garlic powder. Cook for a minute.
  3. Add the orzo and toast for a couple minutes. Pour in the stock, bring to a boil, then reduce heat to a simmer. Cover pot and allow to cook for 8-10 minutes.
  4. Remove the lid, if the liquid is absorbed, it's done. If not, allow to cook for another minute. Stir through parm, cream cheese, heavy cream, then spinach. Squeeze the juice of a small lemon or half a large, and adjust the seasoning if needed.
  5. Store leftovers in the fridge, covered. When you reheat, add a little broth (or splash of water) and more cheese to bring back the creaminess.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in โ€”  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it โ€” no sliding eggs, no mess. 

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently โ€” this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

Sweet apple, crunchy celery, and a lightened-up dressing come together for something thatโ€™s fresh, filling, and way better than the usual mayo-heavy version. Serve it on a bed of lettuce, in a wrap, or with crackers. Make sure youโ€™re following @gina_gibson_cooks for more recipes. 

Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Instructions:
Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.

Thin, chewy centers, crispy edges, and that perfect crinkled top โ€” browned butter is the secret.

Ingredients: ยพ cup unsalted butter, ยพ cup brown sugar (packed), ยฝ cup granulated sugar, 1 large egg, 1 egg yolk, 2 tsp vanilla extract, 1ยพ cups all-purpose flour, ยพ tsp baking soda, ยฝ tsp kosher salt, 1ยผ cups semi-sweet chocolate chips, flaky sea salt for topping

Instructions: Brown the butter in a saucepan until golden and nutty-smelling, then let cool 10 minutes. Whisk in both sugars until smooth, then whisk in the egg, egg yolk, and vanilla. Fold in the flour, baking soda, and salt, then fold in the chocolate chips. Rest the dough at room temp for 20-30 minutes. Scoop into balls and bake at 350ยฐF for 10-12 minutes. Tap the pan firmly on the counter right out of the oven to create the crinkle. Finish with flaky salt while warm.
