Dill Pickle Chicken Salad

Let’s kick up a class chicken salad with some fresh herbs and dill pickle. For any pickle lovers, this is a must. A dill pickle chicken salad!

Chicken salad is a classic dish that’s both delicious and healthy. I love how simple and versatile it can be. Typically we just use some red onion, mayo, maybe some celery, and herbs. But for this dill pickle chicken salad recipe, we are adding some subtle flavor pops with pickle juice, chopped dill pickle, and fresh dill. There’s such good flavor!

A good chicken salad recipe is something I like to keep on hand for weeks I feel the need for some healthy quick meals. You can make a big bowl of chicken salad and then use it for sandwiches, salads, wraps, or just scooped up with some good chips. So easy, so healthy.

Ingredients needed for the Dill pickle chicken salad


  • Shredded Chicken
  • Mayonnaise (favorite)
  • Plain greek yogurt
  • Dill pickle juice
  • Chopped dill pickle
  • Green onion
  • Fresh dill
  • Red onion
  • Salt & pepper

How to make Dill Pickle chicken salad


  • Place all ingredients in a bowl. (love these ones)
  • Mix and enjoy. It’s that simple
  • Place any leftovers in the fridge for 3-5 days.
  • Enjoy the chicken in a salad, sandwich, or scooped up with chips or crackers.

Tips for the Chicken Salad


  • If you do meal planning, cook the chicken ahead of time. You can also buy precooked chicken or rotisserie.
  • This recipe makes 2 sandwiches, I sometimes double the recipe so we can get a few more meals out of this.
  • The pickle flavoring is not too strong so if you like a lot of pickles, add more juice and more chopped pickle.
  • If you don’t like pickles and you’ve made it this far reading, you can skip the pickle.

Ingredients
  

  • 2 cups finely shredded cooked chicken breast
  • ½ cup plain Greek yogurt
  • 2 tbsp – ¼ cup mayonnaise optional
  • ¼ cup diced dill pickles
  • 2 tbsp pickle juice
  • ¼ cup diced celery
  • 2 tbsp finely diced red onion
  • 1 –2 tbsp diced pickled jalapeños
  • 2 tsp fresh dill
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt & pepper to taste

Method
 

  1. Place all the ingredients in a medium bowl and mix. Season with salt and pepper to taste.
  2. Enjoy as is, in a sandwich, salad, or scooped with chips.
  3. Tip: pulse the chicken in a food processor for the best texture.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in —  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it — no sliding eggs, no mess. 

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

Optional 1/4 cup chopped walnuts for crunch.
