Fudgy Tahini Brownies

Few things come out of the oven better than a warm pan of brownies. Now which kind of brownie is open for debate. I personally love a fudgy brownie with a slightly crinkly top. These fudgy tahini brownies totally nail that. The tahini keeps them dense and goey inside but the top gets that slight crispiness that I love.

The tahini adds another layer of complexity to the flavor; it enhances the sweetness of the brownie without overpowering it and adds an absolutely delightful nutty aroma. By replacing refined sugars with coconut sugar and maple syrup, these brownies retain a little more nutritional value. Well, for a treat. Not to mention the unforgettable texture these brownies offer โ€“ each bite is a little different, making it a truly unique and enjoyable experience.

Tahini isn’t the only unexpected ingredient you can add to your brownies. Flaky sea salt sprinkled over the top of a classic brownie can add a salty kick to the chocolatey sweetness. It’s such a lovely contrast. If you can’t find or don’t want to use tahini, you are welcome to use any nut or seed butter. The nut or seed butter consistency helps add to the density which gives these fudgy tahini brownies the fudgy texture. And for the crispy top? That comes from vigorously whisking the eggs.

A couple more things about this recipe before you dive in. What kind of sugar to use? I’ve used both regular and coconut sugar. If using coconut, you the full amount, regular sugar you can cut a tiny bit out as they will be sweeter. Espresso powder, highly recommend to bring out the chocolate flavor. I add tapioca flour or arrowroot powder but if you don’t have that, no need to buy it for 1 tbsp. Use cornstarch. I love melted butter but melted coconut oil works too.

INGREDIENTS FOR THE FUDGY TAHINI BROWNIES


  • 2 eggs – room temp, whisked vigorously before added to other ingredients
  • 2 tbsp melted butter
  • 1/4 cup maple syrup
  • 1 cup tahini
  • ยผ cup sugar (or coconut sugar)
  • 1 tsp vanilla
  • 1/2 tsp espresso powder (optional)
  • 1/3 cup cocoa powder
  • 1/2 tsp baking powder
  • 1 tbsp tapioca flour or arrowroot powder
  • ยผ tsp salt
  • 4 oz chopped chocolate (1/2 cup)

HOW TO MAKE FUDGY TAHINI BROWNIES


  • Mix wet ingredients, including sugar in bowl.
  • Add dry ingredients then stir in chopped chocolate.
  • Pour in greased or parchment paper lined pan
  • Bake 350 in an 8×8 pan for 20-22 min,

TIPS AND COMMON QUESTIONS FOR THE FUDGY TAHINI BROWNIES


  • Do I have to add espresso powder? No, but it helps enhance the chocolate flavor
  • Is there a substitute for tahini? Peanut butter or almond butter would probably be best. Sunbutter maybe too but that’s definitely not my favorite.
  • Is there a substitute for tapioca or arrowroot flour? You can also use cornstarch.

High Protein Jalapeรฑo Cheddar Bagels If youโ€™ve be High Protein Jalapeรฑo Cheddar Bagels

If youโ€™ve been looking for an easy homemade bagel recipe, these baked jalapeรฑo cheddar bagels are so good. They have a slightly crisp outside, soft inside, lots of cheesy flavor, and around 14g protein each.

Made with Greek yogurt, flour, cheddar cheese, and jalapeรฑos, this is a simple high protein breakfast, meal prep idea, or snack recipe.

125g all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
180g plain Greek yogurt
1/2 cup shredded cheddar cheese
1 jalapeรฑos, finely diced and seeds removed
1 egg for egg wash
Extra cheddar + jalapeรฑos for topping

How to:
Mix flour, baking powder, and salt. Stir in Greek yogurt until a dough forms. Fold in cheddar and jalapeรฑos. Knead lightly on a lightly floured surface until smooth. Add more flour slowly if the dough is too sticky. Careful not to add too much. Divide into 4 pieces and shape into bagels. Brush with egg wash and top with extra cheese and jalapeรฑos. Bake at 400ยฐF for 20โ€“25 minutes until golden.

I sprinkle feta cheese directly into a hot pan, add a little chili crisp, crack two eggs in the center, then cover until cooked. The feta gets golden and crispy around the edges and the eggs stay soft in the middle.

Creamy yolks mashed with cottage cheese, chopped egg whites, lots of salt and pepper, then piled onto toasted sourdough with green onion and dill.

2 hard boiled eggs
4 tbsp cottage cheese, divided
Salt + pepper
Toasted sourdough
Green onion
Fresh dill

Optional 
Pickled jalapeรฑos
Sriracha 
Extra herbs
Everything seasoning

Separate yolks from whites
Mash yolks with 2 tbsp cottage cheese
Chop whites and mix with remaining 2 tbsp cottage cheese
Combine everything and season well
Add to toasted sourdough
Top with green onion, dill, and anything extra you love

1 bag crinkle cut frozen fries 
2 lbs very lean ground beef
2 tsp garlic powder
2 tsp onion powder
1 tsp smoked paprika
Salt + pepper
2โ€“3 tbsp ketchup
2 tsp yellow mustard
1โ€“2 tsp Worcestershire sauce
6โ€“8 slices cheddar cheese

Toppings
Shredded lettuce
Diced tomatoes
Pickles

Burger Sauce
1/2 cup plain Greek yogurt
2 tbsp mayo
2 tbsp ketchup
2 tsp mustard
1โ€“2 tbsp pickle juice
Pinch garlic powder

Bake fries according to package directions until extra crispy.
Brown ground beef in a skillet. Add garlic powder, onion powder, paprika, salt, pepper, ketchup, mustard, and Worcestershire. Cook until flavorful and slightly saucy.
Spread fries on a sheet pan and top evenly with beef.
Add cheddar slices over the top.
Return to oven for 3โ€“5 minutes until melted.
Top with lettuce, tomato, onion, and pickles.
Mix burger sauce ingredients and drizzle over everything. Serve immediately. 

* if planning for leftovers donโ€™t add toppings immediately.
** I doubled the ground beef and the seasoning for extra protein. If you only use 1 pound of ground beef cut everything else in half.
