Buffalo ‘Chick’n’ Salad

There’s a vegan chain restaurant near our house that we order from frequently. They have a buffalo wing salad that is so damn good, I have a hard time ordering anything else.

I’ve looked into how they do it and it seems a little labor intensive. From what I can gather, it’s seitan, which means there’s kneading and a lot of work. So we are going to skip that and use tofu. We like to keep things simple around here.

The rest is just a simple green salad. I think it’s best over lettuce like romaine or butter. Add some avocado and celery if you have it. To keep it simple, just use a bottle dressing. Ranch is delicious.

 

Buffalo Wing Salad

Ingredients
  

  • 1 block organic tofu pressed for at least 30 minutes
  • 1/4 cup breadcrumbs
  • 1/4 cup arrowroot powder cornstarch works too
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 cup non dairy milk
  • 1 tbsp olive oil
  • 1/2 cup buffalo sauce I like Franks
  • 1/2 tsp garlic powder

Method
 

  1. Start by pressing the tofu. Cut the block through the center, essentially creating two blocks. Place between two clean kitchen towels. Use something heavy, like a cast iron pan, on top to weigh it down. Keep it like this for at least 30 minutes. You could do this in the morning before work too. You want to get out as much of the water as possible
  2. Preheat oven to 400
  3. Once the tofu is pressed, rip into large bitesized pieces.
  4. In a medium bowl, mix the arrowroot powder, paprika, garlic powder, onion powder, and a good pinch of salt, and the breadcrumbs.
  5. In another bowl, mix the milk and oil.
  6. Toss the tofu bites into the milk mixture. Using a slotted spoon, remove and toss them in the breadcrumb mixture. Mix around to get them coated.
  7. Spread the tofu bites on a baking sheet. Bake for 20 minutes, removing halfway through to give them a flip.
  8. After they bake, remove and toss with the buffalo sauce mix (buffalo sauce and garlic powder). Bake for just a couple minutes, about 3.
  9. Serve as is, dipped in your favorite ranch, or over a bed of greens with avocado and celery.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in —  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.
