Red Curry Cauliflower Soup

February 7, 2019 by Gina +

I was about to turn a head of cauliflower into buffalo cauli tacos but a thick soup sounded so much more satisfying on an unusually cold SoCal night. Just a few ingredients and all the right seasoning turned a simple head of cauliflower into a flavorful, easy, healthy meal. It’s nice and hearty too so it can stand on it’s own.
