Easy Romesco Sauce

April 2, 2020 by Gina +

Here’s an easy, delicious recipe for romesco sauce, because we can all use more sauces and dips in our arsenal I’m sure.

Most of my recipes and meals are really simple. I a big believer in jazzing stuff up with a good spread or sauce. Hummus, tahini dips, and this romesco are some of my favorites. Kick up a basic veggie bowl, add loads of flavor to an avocado toast with this drizzled on top, or simply use as a delicious veggie dip.

Toss everything in a blender and blend until it’s the consistency you prefer. Store in your fridge for about a week, not that it will last that long.

Prep Time 5 minutes mins
Servings: 0
Course: Appetizer, Side Dish, Snack
Ingredients Method

Ingredients

  • 1 16oz jar roasted red peppers, drained
  • 2 garlic cloves
  • 1 cup walnuts or almonds
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • 1 lemon squeeze of lemon, to taste

Method

  1. Lightly toast the nuts in a dry pan over medium heat. Mix around in the pan until they are lightly toasted, careful not to burn.
  2. Toss everything except the lemon in a high speed blender. Blend until almost smooth. Taste and add a light squeeze of lemon to your liking. Blend for another couple seconds. I like to keep it a little chunky. Blend smoother if you prefer.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it — no sliding eggs, no mess.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel
