Butternut Squash Black Bean Enchiladas

Creamy roasted butternut squash with black beans and cheese is a delicious vegetarian comfort dish. When we want a veggie-loaded dinner, these butternut squash black bean enchiladas satisfy the whole family.

I absolutely love butternut squash and when it’s roasted, well that just makes it perfect. It caramelizes slightly and brings out a nice sweetness. When that’s combined with the savory taco seasoning spices and black beans it’s a nice combination.

I like using freshly peeled and diced butternut squash, but buying precut is a great time saver. You can even roast ahead of time if you do any meal prepping. Then, while the butternut squash is roasting, you saute onion, garlic, and seasoning. Add the black beans then the roasted butternut squash. Next up, take your tortillas and prep the enchiladas. You can either lightly dip each tortilla in enchilada sauce then add filling and roll. Or you can add some sauce to your filling, fill the tortillas, then spread the sauce over the enchiladas. I prefer to dip it in the sauce even though it’s a little messy. You can also use flour or corn tortillas, just make sure they are pliable first. I like using the medium low-carb tortillas from Trader Joe’s.

Ingredients needed butternut squash enchiladas


  • Butternut squash, peeled and diced
  • Black beans
  • Diced onion
  • Enchilada sauce
  • Tortillas
  • Enchilada sauce
  • Shredded cheese
  • Chili powder, cumin, salt, pepper

How to make Butternut squash enchiladas


  • Start by adding a little olive oil, salt, pepper, and garlic powder to the butternut squash then roast.
  • While the butternut squash is roasting, saute the onion. Then add the garlic and seasoning than the black beans and a little broth or water. Stir the butternut squash once it’s cooked.
  • Pour a jar of enchilada sauce into a shallow bowl. Take one tortilla at a time and lightly coat in the sauce, letting any excess drip off. Lay the tortilla on a cutting board, take a few tablespoons of filling, then place on one end of the tortilla. Add a little cheese on top. Gently roll and place seam side down in a 9×13 baking dish. You can also use an 8×11, you just may have to lay a couple of perpendicular to the rest of the enchiladas.
  • Repeat the process until you have filled 8-10 enchiladas. If you have extra filling, you can store it in a sealed container in the fridge for later. Top with shredded cheese and bake for 20 minutes.

Tips for the butternut squash enchiladas


  • These black bean and butternut squash enchiladas are made with only a handful of simple ingredients, but because of the roasting time, it’s not a quick cooking meal. You can definitely speed the process by roasting your butternut squash when you do any meal prepping.
  • If you want to meal prep the whole thing, you can do that too. Just reheat at 325 for about 15 minutes.
  • This is a great vegetarian dinner to add whatever veggies you like. You can add zucchini, spinach, or other beans. Just keep in mind if you add more, you will have more filling. You can use fewer black beans or butternut squash in that case. Or just use the leftover filling for another meal.

Ingredients Method

Ingredients
  

  • 3 cups peeled and diced butternut squash roughly 1 medium butternut squash
  • 1 tsp garlic powder
  • 1 medium white onion, diced
  • 3 garlic cloves, minced
  • 1 can drained black beans
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 cup water or broth
  • 8-10 flour tortillas I use the medium carb savvy ones from TJ's
  • 2 cups shredded cheese

Method
 

  1. Preheat the oven to 400.
  2. Toss the butternut squash with a little olive oil, salt, pepper, and garlic powder and spread out on a baking sheet. Roast for 20 minutes.
  3. While the butternut squash is roasting, saute the onion in a large pan for about 5 minutes. Add the garlic, stir for 30 seconds then add the cumin, chili powder, and a good pinch of salt. Let cook for another 30 secons.
  4. Add the black beans and a little broth or water and cook on medium. When the butternut squash is done, turn off the heat and add the squash to the pan.
  5. Pour a jar of enchilada sauce into a shallow bowl. Take one tortilla at a time and lightly coat in the sauce, letting any excess drip off. Lay the tortilla on a cutting board, take a few tablespoons of filling, then place on one end of the tortilla. Add a little cheese on top. Gently roll and place seam side down in a 9×13 baking dish. You can also use an 8×11, you just may have to lay a couple of perpendicular to the rest of the enchiladas.Repeat the process until you have filled 8-10 enchiladas.
  6. Top with shredded cheese and bake for 20 minutes. Add any toppings, like avocado, sour cream, green onion, and enjoy!

The first recipe in my Summer Side Dish Series is The first recipe in my Summer Side Dish Series is this creamy herby potato salad, and itโ€™s going to be on repeat all season long.

Itโ€™s everything I want in a potato saladโ€”tender potatoes, crispy bacon, fresh herbs, a creamy Greek yogurt dressing, and just enough mayo to keep it tasting like the classic version we all grew up with.

2 pounds baby Yukon gold potatoes, halved if large
1 tablespoon pickle brine or white wine vinegar
1 tablespoon Dijon mustard
3/4 cup plain Greek yogurt
1/4 cup mayonnaise
1 garlic clove, grated
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
4 slices bacon, cooked crispy and crumbled
3 green onions, thinly sliced
1/4 cup chopped fresh chives
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
1 celery rib, finely diced

Place potatoes in a large pot and cover with cold water. Season generously with salt. Bring to a boil and cook until fork tender, about 12-15 minutes.

Drain well and spread onto a baking sheet.

While still warm, toss potatoes with the pickle brine and Dijon mustard. Let cool for about 10 minutes.

In a large bowl whisk together Greek yogurt, mayonnaise, garlic, lemon juice, salt, and pepper.

Add potatoes, bacon, celery, green onions, chives, parsley, and dill. Toss gently until coated.

Refrigerate at least 30 minutes before serving.

Finish with extra herbs and bacon right before serving.

For this combination, hereโ€™s what I did:
Butter sourdough then grill on skillet. Add a layer of spread, I used mayo. Top with prosciutto then salami and turkey if you want. Arugula, balsamic glaze, and hot honey. Top with a ball of prosciutto.

Theyโ€™re soft, fluffy, naturally sweetened with ripe bananas and maple syrup, and loaded with mini chocolate chips. I love having these on hand for those endless summer snack requests.

Made with ripe bananas, Greek yogurt, maple syrup, egg, vanilla, oil, flour, cinnamon, baking soda, baking powder, salt, and mini chocolate chips.

I blended 1/2 cup cottage cheese with 1 egg, a little Italian seasoning and garlic powder, then spread it onto parchment paper. I topped it with turkey pepperoni and baked it until golden and set.

Once it cooled slightly, I stuffed it with a chopped Caesar salad and folded it up like a wrap. The result is crispy, cheesy, packed with protein, and one of my favorite lunches lately.

1 large egg
1/2 teaspoon Italian seasoning
Pinch garlic powder
Turkey pepperoni
Chopped romaine
Caesar dressing
Fresh Parmesan

Instructions:
Blend the cottage cheese, egg, Italian seasoning, and garlic powder until smooth. Spread onto a parchment-lined baking sheet and top with turkey pepperoni. Bake at 400ยฐF for 18-22 minutes or until set and lightly golden. Let cool for a few minutes. Toss chopped romaine with Caesar dressing and Parmesan. Fill the wrap with the salad, fold, and enjoy. *make sure you spread it evenly to avoid burning patches.

These might be one of my favorite taco recipes Iโ€™ve made lately. Tacos de papa filling mixed with taco-seasoned beef, stuffed into soft flour tortillas and air fried until golden and crispy.
