Ice Cream Cake

Looking for a dessert recipe that is homemade but really just uses three frozen ingredients and is a guaranteed winner? This ice cream cake is it.

Growing up, every year for my birthday I would request an ice cream cake. Truth be told I still do. It’s my absolute favorite. Now that I have kids I am on a quest to treat them to my favorite cake on special occasions too, like their birthdays. But being a busy mom I had to find an easy way to make one. How do three ingredients from the freezer isle sound? Perfect for me! Use whichever ice cream flavor you like. I’m partial to cookies and cream.

Ingredients needed for the Ice Cream Cake

  • Frozen pound cake – Sara Lee makes the best
  • Ice Cream – pick your favorite flavor. You will need 3-4 cups
  • Cool Whip – Also from the freezer isle

How to make the Ice Cream Cake

  • Defrost the pound cake for at least 15 minutes so you can cut it.
  • Cut the cake horizontally in three slices
  • In the cake tin. Lay a long piece of plastic wrap or parchment paper, enough to wrap around the cake at least once.
  • Lay one piece of cake down. Spread one heaping cup of softened ice cream. Layer the second slice of cake. Spread another heaping cup of ice cream. Last cake layer and one more cup of softened ice cream.
  • Wrap in plastic tightly and place in the freezer for at least 2 hours.
  • When you’re ready to serve, spread a thick layer of cool whip on the top. Sides too if you want. You can add sprinkles or any other toppings. Cut and serve!

Ingredients
  

  • 1 pound cake Sara lee makes a good one, found in most freezer isles
  • 3-4 cups ice cream Pick your favorite flavor
  • 1 container cool whip

Method

Chicken Caesar Smashburger Tacos Mini street taco Chicken Caesar Smashburger Tacos

Mini street taco tortillas (or Mission low-carb), thin smashed ground chicken, and a simple Caesar salad on top. Crispy on the outside, juicy in the middle, and fresh from the salad.

We top ours with chopped Caesar salad, crispy bacon, and sometimes avocado. So good.

Mini street taco flour tortillas or @missionfoodsus low-carb tortillas
1 lb ground chicken
Salt, pepper, garlic powder
2 oz ground chicken per taco
Caesar salad
Cooked bacon, chopped (optional)
Avocado, diced (optional)

How to 
Season the ground chicken with salt, pepper, and garlic powder.
Spread about 2 oz of ground chicken thinly onto each tortilla.
Heat a lightly oiled skillet over medium heat.
Place the tortilla meat-side down in the skillet and cook for about 3 minutes, pressing lightly so it stays flat.
Flip and cook another 2โ€“3 minutes, until the chicken is fully cooked through.
Top with chopped Caesar salad, bacon, and avocado.

My kids are asking for them on repeat. 

Golden, crunchy, pantry-staples โ€” no flour, no deep frying. 

Just chicken, crushed cornflakes, a little BBQ sauce, some seasoningโ€ฆ into the air fryer (or oven) and dinner is handled.

Theyโ€™re easy and theyโ€™re kid-approved!

1 cup fontina cheese shredded
4 eggs 
1/4 cup milk
1/4 tsp garlic powder, 1/2 tsp salt
1 tablespoon butter melted
2 tablespoons grated parmesan cheese

Instructions
preheat oven to 375 degrees
lightly grease a muffin tin
separate the biscuit dough cut each one into 8-10 cubes
in a large bowl, whisk the eggs.
add chopped ham and shredded fontina to the bowl. 
Gently folded in the cut biscuits
bake for 18 to 22 minutes until golden and cooked through adding about 5 extra minutes if needed
brush tops with melted butter and sprinkle with parmesan

Total time about 25 minutes

Serve warm with jam on the side
