Chopped Italian Sandwich

Meaty, cheesy, loaded with veggies, all chopped so you get a bit of all the flavor in every bite. That’s the Italian chopped sandwich. And I am obsessed with it.

Chopped sandwiches seem all the rage on social media so I had to jump on this trend. A good chopped salad is my favorite kind of salad so stuffing that into some good Italian bread seems like a perfect combination. I love how all the ingredients are finely chopped so you can enjoy the different flavors in every bite. Meats, cheese, pepperoncini, lettuce, onion, tomatoes, herbs; it’s all in there.

This culinary masterpiece features a tantalizing trio of meatsโ€”salami, pepperoni, and hamโ€”layered with creamy provolone cheese, crisp lettuce, juicy tomatoes, zesty onions, and tangy pepperoncini, all nestled between two slices of lightly toasted bread. Elevating the experience, a blend of mayo, red wine vinegar, and dried oregano gives each bite savory satisfaction. I recommend starting with lettuce, meats, and cheese, giving it a good chop before adding the vibrant medley of veggies. Lastly, you’ll mix in the mayo, vinegar, and seasoning. Buon appetito!


Ingredients needed for the Sandwich

  • Bread – I like to use Italian loafs
  • Meat – A mix between large salami, large pepperoni, hot ham
  • Red onion
  • Pepperoncini
  • Lettuce
  • Tomato
  • Mayo
  • Red wine vinegar – apple cider works too
  • Dried oregano
  • Olive oil

How to Make the Sandwich

  • Give the lettuce, meat, cheese, onion, tomato, and peppers a good chop then add:
  • Olive oil, a splash a red wine vinegar or apple cider vinegar, a little salt & pepper dash of dried oregano, a spoonful of mayo
  • Mix then stuff into lightly toasted bread

Can I substitute or omit certain ingredients

Absolutely, add whatever meats or cheeses you like. I just find the Italian meats work so well with provolone. Customize to your liking.

How long does it take to make this chopped Italian sandwich?

Chopping takes about 5 minutes, the perfect amount of time to cut and toast some bread.

Can I prepare the ingredients in advance and assemble the sandwich later, or is it best enjoyed fresh?

Best enjoyed fresh. Leftovers don’t store very well.

Ingredients Method

Ingredients
  

  • Bread of choice, I use a lice of Italian loaf
  • 5 large salami slices
  • 5 large pepperoni slices
  • 5 hot ham slices
  • 3 slices provolone cheese
  • 3 Romain leaves
  • sliced red onion However much you like, I do about 2 tbsp
  • handful of cherry tomatoes
  • 2 tbsp peppercini
  • 2 tbsp mayo
  • 1 tbsp red wine vinegar or apple cider vinegar
  • 1/4 tsp dried oregano
  • salt & pepper

Method
 

  1. Start by cutting the bread. I like to remove some of the inside to make more room for the filling. Lightly toast the bread.
  2. Start by chopping the lettuce, meats, cheese, onion, and tomato. Give it all a good chop. Add the pepperncini and chop some more. When you get a fine chop, stir in the mayo, a little drizzle of olive oil, the vinegar, dried oregano and season with salt & pepper.
  3. Stuff into bread and enjoy!

Warm peaches, brown sugar cookie topping, and one pan. 
I serve it straight from the skillet, with a scoop of vanilla.

6 fresh peaches, sliced (skin on or off)
1 tbsp maple syrup or monk fruit
1 tsp vanilla
1 tsp cinnamon
1 tsp lemon juice
1 tsp butter or coconut oil
CRUMB TOPPING
ยพ cup all-purpose flour
ยผ cup brown sugar (or coconut sugar)
2 tbsp cane sugar or monk fruit
ยฝ tsp cinnamon
Pinch of salt
ยผ tsp baking soda
3 tbsp melted butter (or coconut oil)
2 tbsp Greek yogurt
ยฝ tsp vanilla extract

Sautรฉ peaches in oven-safe 9โ€ skillet with butter until soft (5โ€“6 min).
Stir in vanilla, cinnamon, lemon juice, and sweetener.
Top with crumb mixture.
Bake 350 for 25-30 minutes. Top with vanilla ice cream.
Mini ciabatta rolls, mayo on one side, pesto on th Mini ciabatta rolls, mayo on one side, pesto on the other, arugula, provolone, salami, turkey, tomato, and a little flaky sea salt.

Wrap them up, throw them in the cooler, and lunch is done.
