Meatball Flatbread

You can’t go wrong with pizza or pizza-type meals in our house. So when I had some flatbreads from Aldi I needed to use, I figured turning them into pizzas would be a hit. We always have meatballs in the freezer so with some marinara sauce, cheese, and said meatballs, we had these meatball flatbreads and they were delish. They’ve quickly become an easy weeknight dinner in our house.

I love cooking and preparing food for my family, but I am always looking for easy meals I can get on the table quickly. With two little kids, sometimes it comes down to dinner in under 30 or else they will snack themselves full. These flatbread pizzas are not only easy and quick, but everyone loves them. Thanks to frozen meatballs (fresh work great too), some ready-made flatbreads, shredded cheese, and marinara, you can have a tasty dinner on the table in no time!

I love using frozen meatballs for this pizza but you can substitute any toppings you like. It’s a risky move in my house but adding some veggies is another great option. Sometimes I like to throw a chopped salad on my part too. A salad pizza is so good too. I can’t get my kids to go for it but I love it. Otherwise, you can add a side salad to get in some vegetables.


Ingredients needed for the Meatball Flatbread

  • Ready-made flatbread (Trader Joe’s and Aldi have some good ones)
  • Shredded mozzarella or Italian blend cheese
  • Thawed, already-cooked meatballs
  • Marinara or pizza sauce

How to Make the Meatball Flatbread

  • Preheat oven to 400.
  • Spread sauce over flatbread.
  • Cut meatballs in half then place most of them cut side down on sauce. Cover with cheese.
  • Use any remaining meatballs on top.
  • Bake for 10-15 minutes, until cheese is melted and starting to bubble.

I think pizza always goes best with a nice chopped salad.

Per Flatbread
  • 1 pre-cooked flatbread Aldi and Trader Joe's have great ones
  • 6-10 small meatballs, cooked I use defrosted frozen meatballs
  • 1/3 cup Pizza or marinara sauce
  • 1/2 cup shredded mozzarella or Italian blend cheese

Method
 

  1. Preheat oven to 400. Spread sauce over flatbread. Cut meatballs in half then place most of them cut side down on sauce. Cover with cheese. Use any remaining meatballs on top. Bake for 10-15 minutes, until cheese is melted and starting to bubble.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently โ€” this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel

Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Instructions:
Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.
