Crispy Chicken Caesar Sandwiches on Garlic Bread

Ingredients
  

For the Chicken
  • 2 large boneless skinless chicken breasts, sliced in half lengthwise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • Cooking spray
For the Greek Yogurt Caesar Dressing
  • ¾ cup plain Greek yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove finely grated
  • Fresh cracked black pepper
  • 1 to 2 tablespoons milk if needed to thin
For the Garlic Bread
  • 4 sandwich rolls or ciabatta rolls
  • 2 tablespoons melted butter
  • 1 garlic clove grated
  • 1 teaspoon chopped parsley
  • 2 tablespoons grated Parmesan cheese
For Assembly
  • Chopped romaine lettuce
  • Fresh Parmesan shavings
  • Extra black pepper

Method
 

  1. Season the chicken with garlic powder, onion powder, paprika, salt, and pepper.
  2. Dredge each piece in flour, then egg, then the panko mixed with Parmesan.
  3. Spray lightly with cooking spray and air fry at 400°F for 8–10 minutes, flipping halfway through, until golden brown and cooked through.
  4. Meanwhile, whisk together all of the Caesar dressing ingredients until smooth.
  5. Mix together the melted butter, garlic, parsley, and Parmesan. Brush the cut sides of the rolls and toast until golden.
  6. Lightly toss the chopped romaine with a few spoonfuls of the Caesar dressing.
  7. Spread additional dressing on the toasted rolls, add the crispy chicken, top with the Caesar salad and fresh Parmesan, then finish with the top half of the garlic bread.
  8. Serve immediately while everything is warm and crispy.
