Homemade Cheddar Jalapeno Bagels

- 1 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1 cup cottage cheese
- 1/4 cup plain Greek yogurt
- 1 cup low-fat shredded cheddar cheese
- 1 jalapeno 1/2 diced, 1/2 sliced for topping (or less if you don't want it spicy)
Preheat oven to 375.
Mix all the ingredients in a bowl. Using your hands is easiest. Add more flour if it's too sticky.
Once you can form it into a ball, cut into 4 equal parts. Roll those into balls then form into a bagel.
Place on a parchment lined baking sheet. I like to brush with egg, top with a little more cheddar and the sliced jalapenos.
Bake for 20-25 minutes, until crispy on top. Best served warm and toasted.
