Homemade Cheddar Jalapeno Bagels

Ingredients
  

  • 1 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup cottage cheese
  • 1/4 cup plain Greek yogurt
  • 1 cup low-fat shredded cheddar cheese
  • 1 jalapeno 1/2 diced, 1/2 sliced for topping (or less if you don't want it spicy)

Instructions
 

  • Preheat oven to 375.
  • Mix all the ingredients in a bowl. Using your hands is easiest. Add more flour if it's too sticky.
  • Once you can form it into a ball, cut into 4 equal parts. Roll those into balls then form into a bagel.
  • Place on a parchment lined baking sheet. I like to brush with egg, top with a little more cheddar and the sliced jalapenos.
  • Bake for 20-25 minutes, until crispy on top. Best served warm and toasted.
