Buffalo Chicken Dip

The perfect savory dish. A cheesy buffalo chicken dip that can be served hot, cold, or as a filling for a wrap that is easy to make, delicious, and healthy. It’s one that’s on repeat in our house.

I really love this dish. I call it a dip when I make it for an appetizer and serve it with crackers, but it’s also a great filling for a wrap or quesadilla. And it’s so easy and healthy. It is protein-packed, filled with shredded chicken, cottage cheese, Greek yogurt, and a little shredded cheese. I bake it and serve it warm, but it’s also quite tasty cold, on its own, dipped, and stuffed into a tortilla. It’s an easy thing to make ahead because the leftovers are delicious.

Ingredients needed for the Buffalo Chicken Dip

  • Shredded chicken – I use rotisserie to make it easier
  • Buffalo sauce – this is my absolute favorite
  • Greek yogurt
  • Cottage cheese – my favorite brand
  • Shredded cheese
  • Garlic powder, salt, and pepper

How to make the Buffalo Dip

  • Preheat oven to 350.
  • In a large bowl, stir together the yogurt, cottage cheese, cheddar, garlic powder, buffalo sauce, salt, and pepper to taste. 
  • Stir in the chicken. 
  • Spoon into an 8×8 baking dish.  Top with more cheese. 
  • Bake for 20 minutes.
  • Serve with crackers or bread. Or add to a wrap or quesadilla. Leftovers can be warmed or served cold.

Tips & FAQ for the Blondies

What’s the best baking dish?

I prefer glass 8×8 for baking.

What’s the best way to store these?

Sealed in the fridge for up to 5 days. Serve warm or cold

Any substitutions?

Use whatever buffalo sauce you want. You can use more greek yogurt if you don’t add cottage cheese. You can also use Monterey jack or a cheddar blend if you don’t use straight cheddar.

Best way to serve this dish?

If it’s an appetizer, serve with crackers or toast. It’s also great as a filling for a wrap or, sandwhich, or quesadilla. I even like this cold.

Ingredients
  

  • 2 cups shredded chicken I use rotisserie to make it easy

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in —  meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Sweet apple, crunchy celery, and a lightened-up dressing come together for something that’s fresh, filling, and way better than the usual mayo-heavy version. Ingredients:
2 cups cooked chicken breast, finely shredded
1/2 cup Greek yogurt
1/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1 teaspoon lemon juice
1 small apple, finely chopped
1/4 dried cranberry 
2 tablespoons chopped fresh parsley, 
salt and pepper to taste
Optional 1/4 cup chopped walnuts for crunch.

Instructions:
Finely shred or mash the cooked chicken breast to your preferred texture. In a large bowl, combine the Greek yogurt, light mayonnaise, Dijon mustard, and lemon juice, mixing until smooth. Add the chicken, apple, celery, red onion, and parsley, and stir until everything is evenly coated. Season with salt and pepper, and mix in the walnuts if using. Cover and refrigerate for at least 30 minutes so the flavors meld, then serve chilled on lettuce, in a wrap, or with crackers.
