Soft, Fluffy Mini Muffins for Summer Snacking

If your house is anything like mine during the summer, the phrase “I’m hungry!” starts about five minutes after breakfast and somehow never stops. That’s exactly why I love having a batch of these Healthy Banana Chocolate Chip Mini Muffins on hand. They’re soft, fluffy, naturally sweetened with banana and maple syrup, and the perfect grab-and-go snack for busy kids (and parents!).

These mini muffins strike the perfect balance between wholesome and delicious. The Greek yogurt keeps them moist, the ripe bananas add natural sweetness, and the mini chocolate chips make them feel like a treat without being overly sugary. I love making a batch at the beginning of the week and keeping them on the counter or in the fridge for easy snacking.

Ingredients

2 medium ripe bananas, mashed (about 220-240g peeled)

1/3 cup plain Greek yogurt

1/4 cup pure maple syrup

1 large egg

1 teaspoon vanilla extract

1/4 cup neutral oil

130g all-purpose flour

1 teaspoon cinnamon

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/3 cup mini chocolate chips

Main Ingredient Breakdown

Ripe Bananas

The bananas provide natural sweetness and moisture while helping reduce the amount of added sweetener needed.

Greek Yogurt

Greek yogurt helps keep these muffins soft and tender while adding a little protein and richness.

Maple Syrup

A small amount of maple syrup adds sweetness without making the muffins overly sugary.

Mini Chocolate Chips

Mini chocolate chips distribute evenly throughout the batter so every bite gets a little chocolate.

Cinnamon

A touch of cinnamon adds warmth and makes these taste like a bakery-style banana muffin.

Instructions

Preheat your oven to 350°F. Grease a mini muffin pan well and set aside.

In a large bowl, mash the bananas until mostly smooth. Add the Greek yogurt, maple syrup, egg, vanilla, and oil. Whisk until combined.

In a separate bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.

Add the dry ingredients to the wet ingredients and stir gently until just combined. Fold in the mini chocolate chips.

Fill each mini muffin cavity about 85-90% full. Sprinkle a few extra mini chocolate chips on top if desired.

Bake for 11-13 minutes or until the tops spring back lightly and a toothpick comes out with a few moist crumbs.

Allow the muffins to cool in the pan for 5 minutes before transferring them to a cooling rack.

Method

  6. Fill each mini muffin cavity about 90% full. Top with a few extra chocolate chips if you want.
  7. Bake for 11-13 minutes, or until the tops spring back lightly and a toothpick comes out with a few moist crumbs.
  8. Let cool in the pan for 5 minutes, then carefully remove to a wire rack.

Tips

Don’t overmix the batter. Stir just until the flour disappears for the softest muffins.

Use very ripe bananas with lots of brown spots for the best flavor and sweetness.

Skip the liners and grease the pan instead. These muffins release much more easily this way.

Store leftovers in an airtight container for up to 3 days at room temperature or up to 5 days in the refrigerator.

These freeze beautifully. Simply thaw at room temperature or microwave for a few seconds before serving.

FAQ

Can I make these in a regular muffin pan?

Yes! Divide the batter among 10-12 standard muffin cups and bake for about 18-22 minutes.

Can I use whole wheat flour?

You can substitute up to half of the all-purpose flour with whole wheat flour. Using all whole wheat flour may make the muffins denser.

Can I leave out the chocolate chips?

Absolutely. The muffins are delicious on their own, or you can swap in blueberries or chopped nuts.

How do I know when they’re done?

The tops should spring back when lightly touched, and a toothpick should come out with a few moist crumbs attached.

Can I freeze them?

Yes! Freeze in a zip-top bag for up to 3 months.

1 egg
Shredded cheese
2 slices bacon
1/2 avocado, mashed
1 hash brown

Instructions:
Cook the bacon and chop it up. Mash the avocado and season with salt, mix in the bacon, and spread it on the tortilla. Cook the egg with a little shredded cheese, letting it cook mostly through, then fold it. Top the avocado with the hash brown, then add the folded egg. Fold the tortilla into a burrito and crisp it in a pan.
High-Protein Burrito Bake If you love taco night High-Protein Burrito Bake 

If you love taco night but want something a little lighter and higher protein, this one’s for you. Folded burritos baked in a ring in the cast iron — easy weeknight dinner and meal-prep friendly

serves 6
1 lb lean 93/7 ground beef
1 packet taco seasoning
1/2 onion
3.5 oz shredded cheddar + 2 tbsp for the meat mix
1/3 cup Greek yogurt (swap for sour cream if you want)
1 can fat-free refried beans
6 low-cal carb-balanced tortillas (70 cal each) @missionfoodsus 
Queso

How to make it:
Brown the beef, add taco seasoning, let it simmer
Stir in Greek yogurt + 2 tbsp shredded cheese
Cut a slit from center to edge of each tortilla
Layer beans on one section, meat on another, nacho cheese on the last
Fold into a triangle
Arrange in a ring in your cast iron skillet
Top with shredded cheese 
Bake at 375°F for 15 minutes

We top with sour cream, shredded lettuce, salsa, and guacamole

Blistered cherry tomatoes, creamy white beans, cottage cheese and plenty of crusty sourdough. It’s simple, hearty, satisfying and has plenty of protein without feeling like a “high-protein” meal.

Here’s how I make it:

A big handful of cherry tomatoes
1 can white beans, drained and rinsed
Olive oil
Salt + pepper
Squeeze of fresh lemon
Good Culture cottage cheese @good_culture 
Toasted sourdough for serving

Heat a good drizzle of olive oil in a skillet and add the cherry tomatoes. Let them cook until blistered and starting to burst, then give them a light mash.

Add the white beans, season really well with salt and pepper and finish with a squeeze of lemon. Let everything warm together for a few minutes.

Spoon into a bowl, add plenty of cottage cheese on top and serve with toasted or crusty sourdough for scooping.

So simple. SO good.

1 container Trader Joe’s bruschetta sauce

Warm the Boursin in the microwave just enough to soften it, then spread into a shallow bowl.

Mix the lentils and bruschetta together and spoon over the Boursin.

Serve with crackers, toasted bread or pita chips.

It’s quick, filling, and easy to throw together on busy days. I use a Mission Carb Balance tortilla, so it ends up with about 30–35g of protein and 15g of fiber, which keeps me full for hours.

1 Mission Carb Balance tortilla (or your favorite large tortilla)
2 tbsp mayo
1 tbsp hot sauce 
1 breaded chicken cutlet (about 3 oz, or use grilled chicken)
2 tbsp shredded lettuce
¼ avocado, sliced
¼ cup shredded cheese

Cut a slit from the edge of the tortilla to the center.

Mix the mayo and hot sauce, then spread it over one quarter of the tortilla. Cook the chicken (I usually use the air fryer), slice it, and layer it over the sauce. Add the lettuce to the next section, avocado to the third, and cheese to the last.

Fold each section over the next until you have a triangle. Cook in a lightly oiled skillet for 2–3 minutes per side, until the tortilla is golden and crispy and the cheese i
