My love of golden milk inspired these delectable pancakes. Every once in a while, I love savoring a comforting cup of golden milk, infused with turmeric, cardamom, cinnamon, and cloves – now imagine those same warm flavors infused into a stack of fluffy pancakes. It’s a breakfast dream come true!

The Recipe: Wholesome Ingredients, Sensational Flavors

Starting the day is the perfect time for a good nutrient boost, a meal that nourishes your body. That’s why I typically go for something with lots of protein. With the protein-packed cottage cheese and immune-boosting turmeric and aromatic spices, it’s a total delight.

Recipe: Protein-Packed Golden Milk Pancakes
Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • Pinch of ground cloves
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • Maple syrup, for serving
  • Optional toppings: sliced bananas, chopped nuts, or a dollop of Greek yogurt

Instructions:

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, turmeric, cardamom, cinnamon, and cloves.
  • In another bowl, beat the eggs and then add the cottage cheese, milk, and melted butter. Mix until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix – a few lumps are perfectly fine.
  • Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Repeat with the remaining batter, adjusting the heat as needed to prevent burning.
  • Serve the pancakes warm with butter, maple syrup, and your favorite toppings.

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 tsp turmeric
  • 1/4 tsp cardamom
  • pinch cloves & black pepper
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 cup cottage cheese
  • 3 eggs
  • 2 tbsp melted butter
  • 2 tbsp monkfruit sweetner or regular sugar
  • milk a couple of splashes to get the right consistancey.

Method
 

  1. in a medium bowl, mix the dry ingredients then whisk in the eggs, cottage cheese, butter, and milk, just a little milk at a time to get the right consistency. The batter will be thick. I find 2 tbsp gets it right.
  2. Add about ¼ cup of batter into a warm buttered pan. Cook for a few minutes each side then flip.

Warm peaches, brown sugar cookie topping, and one pan. 
I serve it straight from the skillet, with a scoop of vanilla.

6 fresh peaches, sliced (skin on or off)
1 tbsp maple syrup or monk fruit
1 tsp vanilla
1 tsp cinnamon
1 tsp lemon juice
1 tsp butter or coconut oil
CRUMB TOPPING
¾ cup all-purpose flour
¼ cup brown sugar (or coconut sugar)
2 tbsp cane sugar or monk fruit
½ tsp cinnamon
Pinch of salt
¼ tsp baking soda
3 tbsp melted butter (or coconut oil)
2 tbsp Greek yogurt
½ tsp vanilla extract

Sauté peaches in oven-safe 9” skillet with butter until soft (5–6 min).
Stir in vanilla, cinnamon, lemon juice, and sweetener.
Top with crumb mixture.
Bake 350 for 25-30 minutes. Top with vanilla ice cream.
Mini ciabatta rolls, mayo on one side, pesto on th Mini ciabatta rolls, mayo on one side, pesto on the other, arugula, provolone, salami, turkey, tomato, and a little flaky sea salt.

Wrap them up, throw them in the cooler, and lunch is done.
