Maple Soy Glazed Chicken Tacos

These maple and soy glazed chicken tacos are a perfect combo of salty and savory with just a hint of sweetness from the maple. When you the maple and soy down it creates this delicious, thick glaze for the chicken making it like an Asian-inspired BBQ sauce. I top with some fresh cabbage slaw for some crispy coolness.

In our house, tacos are always a win. And because we love them and have them quite often, it’s nice to change it up with a different flavor. My kids and husband devour these so I consider that a win too!

The sauce is made by cooking down maple syrup, soy sauce, some ginger, garlic, and vinegar. It gets nice and thick and when it starts to carmelize, you add the chicken. I use rotisserie chicken to make this super quick and easy. While everything is cooking, I quickly shred a little green cabbage, although bagged works just fine, and add a dollop of Greek yogurt and lime juice. It’s the perfect crisp and cool pairing for the flavorful chicken. Then I layer it all up in some mini street taco flour tortillas.


Ingredients needed for the Maple Soy Glazed Chicken Tacos

  • Shredded chicken – I pick up rotisserie to make it super quick and easy
  • Maple syrup
  • Soy sauce or tamari
  • Freshly grated ginger – You’ll only need a small nub
  • Garlic
  • Cornstarch
  • Shredded cabbage – or bagged works fine too
  • Greek yogurt – you can also use sour cream
  • Lime
  • Tortillas – I like using the small street taco size

How to make the Chicken Tacos

  • In a skillet over medium heat, pour in the maple syrup and soy sauce. Then add the ginger, garlic, .
  • Stir and cook for a couple minutes letting the liquid cook down.
  • Mix the cornstarch and water in a little bowl. Pour into the pan and let the sauce thicken. When it has all cooked for about 5 minutes, stir in the chicken to coat and warm.
  • While everything is cooking, add the shredded cabbage, yogurt, and juice from 1 lime to a bowl. Stir.
  • Warm the tortillas then layer a little slaw then chicken.

Tips & FAQ for the Chicken Tacos

Do I have to use street taco size or can I use regular?

Any size works fine, I just like the smaller ones for this.

What other toppings can I add?

I’ve added green onion and radish and loved it. Anything crisp and cool is a nice balance.

Ingredients
  

Chicken
  • 2 cups shredded rotisserie chicken
  • 1 tablespoon olive oil
Maple Soy Glaze
  • ¼ cup soy sauce
  • ¼ cup maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves minced
Cornstarch slurry
  • 1 tablespoon cornstarch mixed with 1½ tablespoons water
Slaw
  • 2 cups shredded cabbage
  • ¼ cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 2 green onions thinly sliced
  • pinch of salt
For Serving
  • 8 small tortillas
  • optional toppings: sesame seeds cilantro, lime wedges

Method
 

Make the Slaw
  1. In a medium bowl, mix together the cabbage, Greek yogurt, lime juice, green onions, and a pinch of salt.
  2. Toss until well combined and place in the fridge while you prepare the chicken.
Crisp the Chicken
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the shredded chicken and spread it out in the pan. Let it cook undisturbed for 2–3 minutes so the edges get lightly golden.
  3. Stir and cook another 1–2 minutes until warmed through and slightly crispy.
Make the Sauce
  1. In a bowl, whisk together the soy sauce, maple syrup, rice vinegar, sesame oil, ginger, and garlic.
  2. Pour the sauce directly into the skillet with the chicken and let it simmer for 2–3 minutes so the flavors combine.
  3. Stir in the cornstarch slurry and cook for another 1–2 minutes until the sauce thickens and becomes glossy.
  4. Toss the chicken so it’s fully coated—there should be enough sauce to cling to every piece.
Assemble
  1. Warm the tortillas.
  2. Fill each with the saucy chicken and top with the creamy slaw.
  3. Finish with sesame seeds, cilantro, or a squeeze of lime.

They’re packed with protein from eggs, sausage, cottage cheese, and cheese.

Ingredients:
1 lb breakfast sausage
4 eggs (scrambled)
1 egg (mixed in)
1/2 cup cottage cheese
1/2 cup low-fat shredded cheese
1/2 cup all-purpose flour
1 tsp baking powder
1/2 tsp garlic powder
Salt + pepper

Cook the breakfast sausage in a skillet until browned. Push to one side and scramble 4 eggs.

Add sausage + eggs to a bowl with 1 more egg, cottage cheese, shredded cheese, flour, baking powder, garlic powder, salt, and pepper. Mix until combined.

Scoop with a 2 tbsp scoop onto a parchment-lined baking sheet.

Bake at 375°F for about 18 minutes, or until golden. Makes about 15 biscuits.

1 lb ground beef
1 small yellow onion, diced
1/2 cup uncooked white rice
1 cup blended cottage cheese
1 (15 oz) jar salsa
1 cup shredded cheddar or taco cheese blend
1 package taco seasoning
*chips, sour cream, avocado for topping and scooping

Preheat oven to 375°F. In an oven-safe skillet, cook ground beef and onion on medium heat until beef is browned.

Stir in taco seasoning. Add salsa, cottage cheese, the rice, then 1/2 cup water. Mix well.

Cover tightly with foil and bake for 25-30 minutes

Remove from oven, top with cheese. Serve with sour cream, avocado, and plenty of chips for scooping

Save this for your next quick dinner night.

The sauce is the real star here. Savory, rich, and packed with flavor from the miso, garlic, soy sauce, and ginger.

2 lb chuck roast
Salt + pepper
1 tbsp olive oil
2 tbsp white miso paste
2 tbsp soy sauce
1 tbsp rice vinegar (or apple cider vinegar)
1 tbsp brown sugar or honey
1 tbsp fresh ginger, grated
3 cloves garlic, minced
1½ cups beef broth
1 tsp sesame 

Mashed potatoes, for serving

Season the chuck roast well with salt and pepper. Heat olive oil in a Dutch oven or heavy pan and sear the roast on all sides until deeply browned.

In a bowl, whisk together the miso paste, soy sauce, vinegar, brown sugar, ginger, garlic, beef broth, and sesame.

Pour the sauce over the roast, cover, and braise at 300°F for about 3 to 3½ hours until the beef is fall apart tender.

Remove the meat and shred or slice it. Simmer the sauce on the stovetop for 5–10 minutes until thickened and glossy.

Serve over mashed potatoes and spoon all that sauce right on top.

Lemon Butter Shrimp Bowls with Cilantro Lime Rice Lemon Butter Shrimp Bowls with Cilantro Lime Rice 🍤

This might be one of my favorite easy dinners lately. The buttery garlic shrimp, blistered tomatoes, cilantro lime rice, and salty feta all work so well together

You’ll need 
1 pound shrimp
1 pint cherry tomatoes
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic minced
juice of 1 lemon
2 cups cooked rice
1/4 cup chopped cilantro
juice of 1 lime
crumbled feta for topping 
salt, and pepper.

Cook the rice and mix with chopped cilantro, lime juice, and a little salt. Add olive oil to a hot skillet and cook the cherry tomatoes until blistered and softened. Push the tomatoes to the side of the skillet, then add butter, garlic, and shrimp. Season with salt and pepper and cook until the shrimp are pink and lightly golden. Squeeze in the lemon juice and mix everything together with the tomatoes. Spoon over the cilantro lime rice and top with feta.
