Another easy dish from just a few ingredients from Trader Joe's. Nachos! But middle eastern with pita, hummus, tabouleh and a tahini drizzle. Why did I not make these sooner? This is such an easy and delicious appetizer to throw together when you need something real quick. Or have it for a snack or even a light lunch like we do sometimes. And if you don't have a TJ's close by, most grocery

Baby Must Haves Months 0-3

September 24, 2020 by Gina +

I'm sitting here writing a baby must-have list for the first few months, only a day away from my little one turning ONE! I can't even believe that's possible. Like every parent says, it goes by way too fast. The days are long, very long sometimes, but wow, the year(s) sure do fly. Looking back on this year, it seems as though every few months, our must-haves, the items we use all the time, seem to

Mexican Polenta Bowl

September 22, 2020 by Gina +

Mexican polenta bowl. A warm dish with creamy polenta that is topped with black beans, pico to Gallo, and avocado. But you could add so much more! This is a total comfort food dish that is rather healthy. Plus I love that's that there are so many options. This is something I like to whip up when I don’t have something already planned for dinner, but I don’t want to order out. Super easy

One of my favorite ways to eat summer tomatoes 🍅 One of my favorite ways to eat summer tomatoes 🍅

Blistered cherry tomatoes, creamy white beans, cottage cheese and plenty of crusty sourdough. It’s simple, hearty, satisfying and has plenty of protein without feeling like a “high-protein” meal.

Here’s how I make it:

A big handful of cherry tomatoes
1 can white beans, drained and rinsed
Olive oil
Salt + pepper
Squeeze of fresh lemon
Good Culture cottage cheese @good_culture
Toasted sourdough for serving

Heat a good drizzle of olive oil in a skillet and add the cherry tomatoes. Let them cook until blistered and starting to burst, then give them a light mash.

Add the white beans, season really well with salt and pepper and finish with a squeeze of lemon. Let everything warm together for a few minutes.

Spoon into a bowl, add plenty of cottage cheese on top and serve with toasted or crusty sourdough for scooping.

So simple. SO good.
Save this one for tomato season. 🍅🤍
