Mexican Skillet

July 24, 2018 by Gina +

I love this skillet dish.  It's loaded with peppers, onions, and potatoes and boldly seasoned taco seasoning.  It easily comes together and only uses one pot, but this simplicity doesn't take away from it's amazing taste.  Another plus is it stores well which makes for good leftover.  I added some vegan sausage, which can be left out if it's not your thing.  I also topped my husband's with an egg,

Raspberry Greens Smoothie

June 18, 2018 by Gina +

Smoothies are my go-to breakfast, and even though I'm a creature of habit, this keeps me trying out new combinations so I don't get bored.  I was pleasantly surprised when I chucked a handful of frozen raspberries into a banana spinach smoothie.  The combo is seriously refreshing and nutritious.  Topped off with some nut butter and cacao nibs creates a perfectly tasty smoothie bowl.  I like to add

All The Greens Smoothie

May 22, 2018 by Gina +

It's no surprise that I love my smoothies.  I often opt for a thick, creamy, berry banana combo, but sometimes crave something more cooling and filled with more greens.  Although this smoothie contains a hefty amount of vegetables, the banana and pineapple make it sweet enough so it doesn't taste like a liquid salad.  No bueno.  And for the herbs, which I know sounds strange, it adds a very

Blueberry Banana Smoothie Bowl

May 3, 2018 by Gina +

A blueberry banana smoothie.  It's one of the most basic, but one of my favorite.  It's the perfect vehicle for adding greens and adaptogens.  Seems like smoothies are getting crazy complex these days, with all the frozen vegetables and adaptogens one can add, often limiting fruit, but I still like to keep it simple.  Bananas are the perfect base to create a creamy, dreamy texture.  I like to add

Homemade Nut Butter

April 11, 2018 by Gina +

I thought I should wait before adding another ridiculously simple recipe to the blog, but I've gotten lots of questions on nut butter so... I love making staples, like this cashew butter, because it's so easy, I am in control of the ingredients, and it often saves money.  I've been making a bigger effort to cut back on packaging and food waste lately, so this is also a way to help that

A dinner you don’t want to miss. I cut a hole st A dinner you don’t want to miss.

I cut a hole straight into savory Hawaiian rolls and dropped a protein-packed meatball right in — meatballs made extra tender (and boosted with protein) thanks to a little cottage cheese blended into the mix. Load with marinara, mozzarella, bake until bubbly, and pull apart to serve.

Instead of stacking a fried egg onto a bagel, you Instead of stacking a fried egg onto a bagel, you cook the egg thin in the pan and let the bagel halves press right into it — no sliding eggs, no mess.

Lightly toast the bagel. Whisk the eggs with a little salt and pour into a nonstick pan, spreading it thin. When the egg is almost cooked through, place the two bagel halves on top, pressing gently — this holds the egg in place and keeps it from sliding out. Flip the pan so the bagel side is down and the egg side is up onto a plate. Add your toppings, fold any extra egg over the top, and close the sandwich.

Use a low carb or regular bagel, both work great. I love bagels from @westernbagel
